A favorite from a local restaurant no longer in business. Not an authentic Mexican chile relleno, but a crispy, flaky version.

1 package egg roll wrap
3 cans whole green chilies
8 ounces cheese (Cheddar,jack or pepper jack cut in one ounce sticks)
1/2 box cornstarch
oil (for deep frying)

Steps:

  • Drain green chiles.
  • Sprinkle cornstarch on sheet pan.
  • Open up chile and place on egg roll wrapper with corner facing you.
  • Place cheese stick on chile and roll up, tucking in corners and moistening edges to seal.
  • Toss in cornstarch, dusting liberally.
  • (Can be made up to this point a day ahead. Leave in cornstarch. Cover and refrigerate.) Shake off excess cornstarch and deep fry in 350 oil to cover until lightly golden and cheese just starts to ooze out.
  • Drain on paper towels and keep warm in 250 oven.
  • Serve as a side dish or appetizer with your favorite Mexican meal.
  • Add your favorite condi- ments/sauces.

1 lb ground beef
1 (10 1/2 ounce) can cream of chicken soup
1/2 cup milk
1 teaspoon mayonnaise
1 cup shredded cheese
1 (8 ounce) can refrigerated crescent dinner rolls

Steps:

  • Preheat oven to 425°F.
  • Brown beef and season with a dash of garlic powder, salt and pepper.
  • Drain grease.
  • Stir in mayonnaise.
  • Combine cream of chicken soup and milk and heat until smooth.
  • Separate each roll and spoon 1 tsp of meat mix onto wide end of roll and sprinkle with cheese.
  • Roll up.
  • Spray Pyrex dish with Pam.
  • Spread enough of soup mix to cover bottom of dish.
  • Place crescent rolls in dish.
  • Pour approximately 2/3 of soup mix over crescent rolls.
  • Sprinkle rolls with remaining meat mix and cheese.
  • Pour remaining soup mix over rolls.

16 ounces cheddar cheese, sharp, shredded
8 ounces green olives, stuffed
2 medium green bell peppers
12 large French rolls
6 ounces tomato sauce
1 medium onion

Steps:

  • Cut the tops off of the rolls and hollow them out leaving a thin shell.
  • Grind all of the ingredients and bread in a meat grinder or food processor and stuff back into the rolls.
  • Place the tops back on the rolls and secure with tooth picks.
  • Bake on an ungreased cookie sheet at 350 degrees F. for about 45 minutes.
  • Serve Hot.
