My husband wishes I would make these for him every day. I don't recommend doubling the recipe; make multiple batches instead.

4 eggs
1 pound shredded Cheddar cheese
1 teaspoon minced onion
2 jalapeno peppers, seeded and chopped

  • Preheat oven to 350 degrees F (175 degrees C).

2 ½ cups grated zucchini
6 eggs, beaten
⅓ cup dried bread crumbs

½ teaspoon dried basil
½ teaspoon dried oregano
¼ teaspoon ground black pepper
3 cups shredded Cheddar cheese
