4 boneless skinless chicken breast halves (6 ounces each)
1/2 cup spreadable garlic and herb cream cheese
4 thin slices prosciutto
1/4 cup chopped oil-packed sun-dried tomatoes
8 fresh basil leaves
1/4 cup all-purpose flour
2 eggs
2/3 cup dry bread crumbs
3 tablespoons grated Romano cheese
3 tablespoons olive oil
SAUCE:
1 cup heavy whipping cream
1 tablespoon finely chopped shallot
3/4 cup crumbled Gorgonzola cheese
1/4 teaspoon salt
1/4 teaspoon pepper
Minced fresh basil

Steps:

  • Preheat oven to 350°. Flatten chicken breasts to 1/4-in. thickness; spread 2 tablespoons cream cheese down the center of each. 4 boneless, skinless chicken breast halves
4 oz chevre
4 oz proscuitto, sliced thinly and chopped
4 cloves garlic, chopped
1 tbsp. capers
1 tbsp. Dijon mustard
8 basil leaves
3/4 cup chicken stock
1/2 cup white wine
2 tablespoon olive oil
2 Tbsp chopped parsley
Salt and pepper (to taste)

Steps:

  • In a large ovenproof skillet, sauté the proscuitto until it is brown and crispy. Remove from pan, set aside. Pound the chicken breasts until approximately 1/2 inch thick.
