Time 1h20m

Yield 12

Number Of Ingredients 14

1 teaspoon butter
1 teaspoon olive oil
3 cups elbow macaroni
1 pound smoked beef sausage, cut into bite-size pieces
2 (14.5 ounce) cans stewed tomatoes, chopped, juices reserved
1 sweet onion, diced small
2 ounces shredded sharp Cheddar cheese
2 ounces shredded Monterey Jack cheese
2 teaspoons olive oil, or more to taste
1 teaspoon dried parsley flakes
¼ teaspoon onion powder, or more to taste
¼ teaspoon garlic powder, or more to taste
salt and ground black pepper to taste
1 (8 ounce) package shredded American cheese (such as Kraft® Melts)

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Butter a 9x13-inch baking dish and oil with 1 teaspoon olive oil.
  • Bring a large pot of lightly salted water to a boil. Cook elbow macaroni in the boiling water, stirring occasionally, until cooked through but firm to the bite, 8 minutes. Drain.
  • Stir sausage, tomatoes and reserved juice, onion, Cheddar cheese, Monterey Jack cheese, 2 teaspoons olive oil, parsley, onion powder, garlic powder, salt, and ground black pepper together in a large bowl. Add elbow macaroni and stir. Pour macaroni mixture into prepared baking dish, sprinkle with American cheese, and cover with aluminum foil.
  • Bake in the preheated oven for 30 minutes. Remove aluminum foil from baking dish, increase heat to 425, and bake until sauce is bubbly, and the top is golden brown, about 15 minutes. Cool for 15 minutes before serving.

JOLEAN'S CHEESE POTATO & SMOKED SAUSAGE CASSEROLE

Jolean's Cheese Potato & Smoked Sausage Casserole image

This was another one of our favorites in the 70's Very inexpensive and very easy to make. Just recently found this recipe hand-written by my Mom, and the warm feelings flood back to me, because this was a true favorite in our house. Little did I know that she was on such a tight budget, yet made things like this that we all loved!! NOTE: The meat that was used in this recipe always varied, according to whatever we had available at the time.

Time 1h

Yield 4-6 serving(s)

Number Of Ingredients 10

3 cups idaho potatoes, peeled, boiled and cut into cubes when cool, approx. 1 lb
4 tablespoons butter
4 tablespoons flour
2 cups milk
1/2 teaspoon salt
1/4 teaspoon pepper
1/2 lb Velveeta cheese, diced
1/2 cup sharp cheddar cheese, shredded
1 lb skinless smoked sausage (Eckrich is my favorite brand)
1/8 teaspoon paprika

Steps:

  • Cut skinless smoked sausage in half, lengthwise, and then chop into 1/2 inch "half moon" cuts. Cook in a frying pan for about 15 minutes, turning frequently to SLIGHTLY brown.
  • Meanwhile, put cooked & diced potatoes in 2 quart casserole. Add cooked meat and give it a gentle toss.
  • Mix all remaining ingredients (except for shredded cheddar cheese & the paprika) in a saucepan over medium heat until warm, melted and smooth. (Use a whisk and stir constantly.).
  • Pour white/cheese sauce over potatoes and meat. Sprinkle shredded sharp cheddar cheese on top, and then sprinkle paprika evenly over the top.
  • Bake in preheated 350°F oven for 35-45 minutes (watch, until golden brown on top).
  • NOTE: You can substitute: 1/2 lb. hot dogs, sliced into 1/2-inch slices OR 1/2 lb. ham diced into 1/2-inch dices OR 12 oz. can of Spam diced into 1/2-inch dices, instead of the smoked sausage.

CHEESE, POTATO, & SMOKED SAUSAGE CASSEROLE, SANDY

Cheese, Potato, & Smoked Sausage Casserole, Sandy image

My mother in law gave me this recipe Superbowl Sunday, 2020 (Feb 7). We were talking about how my brother in law is limited on what he can make because the kids seem to be so picky about everything between the three of them. He said this was one of the things they would eat.

Number Of Ingredients 10

4 Tbsp butter
4 Tbsp flour
2 c milk
1/2 tsp salt
1/4 tsp pepper
1/2 lb velveeta, diced
1/2 c shredded cheese
1 lb smoked sausage
1/8 tsp paprika
3 c peeled, boiled, cubed potatoes

Steps:

  • 1. Cut sausages into half moons and fry for about 15 min, stirring often. After potatoes have been cooked, put in greased 2 qt casserole, then add cooked sausage and toss together. Mix remaining except shredded cheese and paprika, in saucepan over med heat with a whisk until melted and smooth. Stir constantly to prevent burning. Pour sauce over meat & potatoes then sprinkle with shredded cheese and paprika. Bake at 350 degrees 35-45 min or until top is golden.

Tips:

  • Choose high-quality ingredients: Use fresh potatoes, flavorful smoked sausage, and a creamy cheese blend. The better the quality of your ingredients, the tastier your casserole will be.
  • Season generously: Don't be afraid to season your casserole well. Salt, pepper, garlic powder, and onion powder are all great additions. You can also add a pinch of cayenne pepper for a little kick.
  • Don't overcook the potatoes: The potatoes should be tender but still hold their shape. Overcooked potatoes will become mushy and ruin the texture of the casserole.
  • Let the casserole rest before serving: This will allow the flavors to meld together and the casserole to set. Waiting at least 15 minutes before serving will give you the best results.

Conclusion:

Cheese potato smoked sausage casserole is a delicious and easy-to-make dish that is perfect for any occasion. Whether you're feeding a crowd or just looking for a comforting meal, this casserole is sure to please. With its creamy cheese sauce, tender potatoes, and smoky sausage, it's a dish that everyone will love. So next time you're looking for a hearty and satisfying meal, give this cheese potato smoked sausage casserole a try.
