1 ½ cups cheddar cheese, shredded
½ cup bacon, cooked, cut into pieces
2 jalapeñoes, minced
½ cup ranch dressing
2 lb ground beef
1 teaspoon salt
2 teaspoons pepper
6 burger buns
12 pieces lettuce

Steps:

  • Combine cheese, bacon pieces, jalapeños, and ranch in a bowl. Stir together and refrigerate.
  • Season the ground beef with salt and pepper in a large bowl, and mix in with your hands.
  • Grab a baseball-sized piece of beef. Roll it with your hands into a ball and place on a parchment lined baking tray.
  • Using a clean, empty soda or beer can, press the ball of beef around the can to create a bowl. Make sure to smooth out any cracks.
  • Fill the bowls with the cheddar mixture and refrigerate for 2 hours.
  • Preheat the grill to 350˚F (175˚C).

I made up this recipe last night on a whim, and boy were they good!! We didn't have any buns and just ate them on toasted bread! (Didn't matter, they were awesome!)

1 1/2 lbs lean hamburger
1 (1 ounce) packet hidden valley ranch dressing mix
6 tablespoons barbecue sauce, more if needed and see note
1/2 lb bacon
1 teaspoon fresh coarse ground black pepper
3 slices marbled cheddar cheese
1 onion, thinly sliced
6 lettuce leaves
3 slices tomatoes
3 tablespoons mayonnaise
3 tablespoons prepared creamy ranch salad dressing
3 hamburger buns, lightly toasted

Steps:

  • In bowl, mix together the hamburger and dressing mix packet well.
  • Shape into 3 patties, set in fridge to chill and firm up.
  • Meanwhile, in large frying pan, cook bacon sprinkling with the pepper on both sides, drain grease saving 1-2 Tbl.
  • Set bacon aside wrapped in paper towel.
  • Fry hamburgers in same pan with a little bacon grease til done.
  • Coat with bbq sauce, top with cheddar slices, cover, heat til cheese is melted. Place on bottom buns, top with bacon, onion, lettuce and tomato.
  • Mix the prepared dressing with the mayo and spread on top buns, place on top.
  • *Note: I always use Sweet Baby Ray's BBQ Sauce. Other bbq sauces might not work well.

- For a low-carb version, use lettuce leaves instead of buns. - To make the burgers ahead of time, cook them and assemble them, then store them in the refrigerator for up to 3 days. When ready to serve, heat them in the oven or microwave until warmed through. - For a vegetarian version, replace the beef with a veggie burger or portobello mushroom. - To add some heat, add a pinch of cayenne pepper or chopped jalapeños to the burger mixture. - If you don't have ranch dressing, you can make your own by combining mayonnaise, sour cream, buttermilk, dried dill, garlic powder, onion powder, salt, and pepper.
