Number Of Ingredients 8

2 tablespoons extra virgin olive oil
4 garlic cloves, thinly sliced or minced
1 small dried red chili, crumbled, or 1/4 to 1/2 teaspoon red pepper flakes
2 pounds mushrooms, wiped clean, stems trimmed, cut in half

Steps:

  • Heat the oil over medium heat in a large, heavy nonstick skillet. Add the garlic and chili or red pepper flakes. Turn the heat down to medium, and continue to cook, stirring or tossing in the pan from time to time, until the mushrooms are tender, five to 10 minutes. Stir in the lemon juice and parsley, taste and adjust seasonings, and remove from the heat. Serve hot or warm in small ceramic dishes, or serve on a platter with toothpicks stuck into the mushrooms.

Tips:

  • Select firm, fresh mushrooms: Look for mushrooms with a smooth, tight cap and gills that are tightly packed together. Avoid mushrooms with slimy or wrinkled caps or gills that are starting to turn brown.
  • Clean the mushrooms thoroughly: Wipe the mushrooms with a damp cloth or paper towel to remove any dirt or debris. If the mushrooms are very dirty, you can rinse them quickly under cold water and then pat them dry.
  • Slice the mushrooms evenly: This will help them to cook evenly. If the mushrooms are large, you can cut them into quarters or smaller pieces.
  • Use a large skillet or sauté pan: This will give the mushrooms plenty of room to cook and prevent them from steaming.
  • Cook the mushrooms over medium-high heat: This will help them to brown and caramelize.
  • Do not overcrowd the skillet: If you overcrowd the skillet, the mushrooms will steam instead of brown.
  • Stir the mushrooms frequently: This will help them to cook evenly and prevent them from sticking to the pan.
  • Season the mushrooms with salt and pepper: Add salt and pepper to taste.
  • Add garlic and parsley: Add minced garlic and chopped parsley to the mushrooms and cook for 1-2 minutes, or until the garlic is fragrant.
  • Serve immediately: Champinones al Ajillo are best served immediately.
