- Soak cedar plank in salted water for 2 hours, then drain. Remove skin from salmon fillet. Remove any remaining bones. Rinse the salmon under cold running water and pat dry with paper towels. Generously season the salmon with salt and pepper on both sides. Lay the salmon (on what was skin-side down) on the cedar plank and carefully spread the mustard over the top and sides. Place the brown sugar in a bowl and crumble between your fingers, then sprinkle over the mustard.
- Set grill for indirect grilling and heat to medium-high. Place the cedar plank in the center of the hot grate, away from the heat. Cover the grill and cook until cooked through, around 20 to 30 minutes. The internal temperature should read 135 degrees F. Transfer the salmon and plank to a platter and serve right off the plank.
- Cook's Note: A direct method to grill the salmon may be used. Soak the cedar plank well. Spread the mustard and brown sugar on the salmon, but do not place the fish on the plank. Set up the grill for direct grilling on medium-high. When ready to cook, place the plank on the hot grate and leave it until there is a smell of smoke, about 3 to 4 minutes. Turn the plank over and place the fish on top. Cover the grill and cook until the fish is cooked through, reaching an internal temperature of 135 degrees F. Check the plank occasionally. - Soak a cedar grill plank in water for at least 1 hour and up to 4 hours. Preheat the grill to medium.
- Mix the rice wine vinegar, maple syrup, soy sauce, ginger and garlic in a medium bowl. Slowly drizzle in the olive oil, whisking constantly, until emulsified. - Soak 1 large cedar grilling plank (15 by 6 inches) in a baking dish of water, about 2 hours; put a plate or mug on top to keep the plank submerged.

- This recipe is for OUTSIDE gas or charcoal plank-grilling.
- For the Cedar Planks: I use UNTREATED 1 by 8 construction grade cedar cut to the length of the amount of salmon you wish to cook. (I cut mine in 10-inch lengths for 2 (8- ounce fillets)
- Soaking the planks: Pre-soak cedar planks for at least 1 hour, preferably longer or overnight. Weigh down planks with heavy cans or stones to completely submerge the wood in water.
- Lightly coat the salmon with olive oil and season with salt and pepper. Place salmon on cedar plank skin-side down.
- Turn on your gas grill to high heat. Place planks (loaded up with salmon) on the grill and close lid. Your grill will now turn into an oven/smoker. Cooking time required will vary depending on the size of the salmon. Be careful when you are lifting the grill lid because the burning plank will produce a lot of smoke. Try to keep the lid closed as much as possible as not to lower the temperature inside the grill. When salmon is cooked, remove fish from plank and plunge wood into a bucket of cold water. Serve the salmon immediately with the Cilantro Pesto.
- Place first 4 ingredients in blender or small food processor and completely puree. Add lime juice, jalapeno, and salt and pepper, to taste.
CEDAR PLANK-SMOKED SALMON

- Brine the fish: Combine the brown sugar, salt, 1 teaspoon pepper and 4 cups water in a large bowl. Stir until the sugar and salt dissolve. Add the salmon and weigh down with a can or skillet to keep it submerged. Cover and refrigerate at least 2 hours or overnight.

- While the plank is soaking, mix together butter, basil and minced garlic cloves, spread on salmon.

Buy your salmon fillets fresh (with skin) and you won't get that fishy smell at all! I baked the salmon when I made this recipe, but I have also included instructions for grilling outdoors. The cedar plank adds a wonderful, smoky flavor. It should be 7 x 14 x 1/3 inches. I found cedar planks in the meat department of my local grocery store. You must soak the cedar plank in water for no less than 30 minutes before use. Prep time includes soaking time.

- Do this 9 hours or more ahead; place the cedar planks in water to completely cover them (use a heavy object to place on top of them to weigh down the planks).
- When ready to grill, for the topping; in a bowl combine the dill, parsley, lemon juice, oil and minced fresh garlic; set aside.

- Purchase 2 pieces of cedar boards, 3/4 inch thick, 7 1/2 inches wide and 18 inches long, untreated.
- Soak cedar boards in water for at least 12 hours before using.
- Preheat barbecue to HIGH heat.
- Remove cedar boards from the water and sprinkle with coarse salt on one side that will be used for placing the salmon filets.
- Place boards on the NOW HOT barbecue for about 3 minutes, DO NOT BURN CEDAR BOARDS.
- Rub salmon filets with olive oil.
- Sprinkle coarse salt and granulated garlic powder on salmon filets.
- Sprinkle salmon filets heavily with dill weed and green onions.
- Drizzle lemon juice over salmon filets and then sprinkle with black pepper.
- Place the salmon filets on the cedar boards, skin side down and layer the top of filets with thinly sliced lemons.
- Drizzle MAPLE SYRUP over the filets.
- Turn barbecue down to medium heat.
- Place prepared salmon on the barbecue grates.
- Close BBQ cover and cook on medium heat for 10 to 15 minutes or until salmon just starts to flake.
- Remove from the barbecue.
- If you have a heavy duty screen with about 1/4" squares, spray with olive oil and place on the barbecue grates. This will prevent any salmon to drop through the grates.
- Slide the salmon filets off the cedar plank onto the screen, with skin side down.
- Turn barbecue heat to HIGH.
- Sprinkle more MAPLE SYRUP on filets, close BBQ lid and cook for another 2 to 4 minutes or until salmon flakes easy. DO NOT OVERCOOK SALMON.
- Remove salmon to large plates.
- Serve immediately with lemon wedges.
- You may also use dark brown sugar on filets instead of Maple Syrup. After you rub the salmon filets with olive oil, spread about 1 tablespoon of brown sugar on each filet (4 tablespoons).
- You may also use white onions sliced instead of green onions or scallions.
- DO NOT RE-USE THE Cedar Boards a second time.

CEDAR PLANK BRAIDED SALMON WITH APPLE BUTTER SAUCE
The biggest challenge in preparation of this recipe is ensuring the braiding stays intact. Once braiding is complete and liquids poured and brushed generously over the fillets, transferring to a backing sheet, is quite simple; chilling overnight is essential. I love this recipe because of its unique flavour. Although originally developed for the barbeque, it can be successfully baked in your oven. This recipe was handed to me in preparation for a wedding reception in B.C. (August/2004); I had to adjust the ingredients, of course, to serve 150 people. Preparation was a fun exercise; the prepared salmon was cooked on a 5 ft. length, 2" X 10", water-soaked, cedar plank and placed on a large, propane-fired grill. The end result was a perfectly seasoned, delightfully flavoured, lightly smoked salmon that had the wedding guests returning to the buffet table, repeatedly, until all 24 salmon fillets had been devoured. When purchasing your salmon, have the fish-monger filet the fish, remove the skin and pin bones.... When you have purchased your cedar plank, soak the plank in cold water, overnight. Place the plank in a container of water, with a rock or brick on the plank to keep it submerged. Soaking the plank will keep it from burning during the cooking process. Not soaking it gives the salmon a stronger, smoky taste. Remember, this is not only a recipe, it is also a cooking lesson, so have patience and you will be pleased with the results. Follow the Instructions carefully, and you cannot fail. It is a wonderful recipe, the end result will amaze you and your guests praise you.

- To prepare Apple Butter Sauce: blend the mayo, butter and tarragon in a bowl and chill until serving time. Makes 2 cups Apple Butter Sauce.
- Fillet the salmon, removing all the bones.
- Remove the skin and pin bones.
- Oil the cedar planks and place the salmon on it.
- Slice through the salmon, from the wide end, lengthwise, to about 2 inches from the tail end.
- Repeat this motion to cut a total of seven strips that are each about 1/2" to 3/4" wide.
- Keep the tail end intact.
- Where the fish is intact at tail end, strips will be narrower.
- Measure out half of the maple syrup and reserve.
- Combine remaining maple syrup with whiskey, or liqueur.
- Brush whiskey mixture all over salmon strips to generously coat.
- Season with salt and pepper.
- To braid: Mentally label the strips starting from the left as numbers 1 through 7.
- Starting with strip number 4 lift it over strips 1 through 3, so that it is now on the outside left-hand side.
- Next, take strip number 3 and lift it over strips 5 through 7 (to the right side).
- Now, start again, renumbering the strips from 1 through 7.
- Again, lift (the new) strip number 4 to the far left and (the new) strip number 3 to the right.
- Continue in this manner until you have braided the whole length of fish.
- Repeat braiding steps for second fillet.
- Pat the braided fish into one compact length.
- Either skewer the loose ends together or simply press together to keep in place.
- At this point, the planked, braided salmon can be set on a backing sheet, covered and chilled overnight.
- To finish the salmon: pour the maple butter and reserved syrup generously over the salmon; use a pastry brush to force the liquid into nooks and crannies.
- Season with salt and pepper.
- Preheat BBQ to medium heat, or oven to 350°F.
- To Barbeque the Salmon: Place the plank on a grill, over medium heat, on the upper rack, if your bbq has one.
- Close lid (or cover salmon with foil roasting pan).
- Cook for 20 to 25 minutes, or until fish flakes easily when tested with a fork and internal temp for the fish reaches 120°F.
- Alternatively: Preheat oven to 350°F.
- To roast the salmon in the oven, place the plank on a foil lined, rimmed baking sheet and bake in a preheated oven for 30 to 35 minutes.
- Remove plank and salmon from heat.
- Dust salmon liberally with maple sugar.
- Salmon may be served hot or cold right from the plank.
- Garnish with fresh herbs if using.
- Serve with chilled Apple Butter Sauce.
CEDAR PLANK RUM SALMON

- Mix the rum and water in a large container and submerge the planks in the water for 30 to 45 minutes, allowing the planks to become soaked.
- Meanwhile, in a medium-size bowl, mix together the sugar, ginger, coriander, salt, cinnamon, and lemon juice to create a paste. Spread spice mixture evenly on top of the flesh side of salmon (not skin side). Refrigerate for 30 minutes and up to 1 hour.
- Preheat the grill over medium-high.
- Remove the fillet from the refrigerator and arrange on the planks, unseasoned side down. Put the planks on the grill and cook until the flesh is firm to the touch, allowing the plank to smolder, not burn, about for 30 to 40 minutes. SURF AND SURF: CEDAR PLANK-GRILLED SALMON AND HALIBUT WITH PARSLEY AND DILL PESTO
Steps:
- Soak untreated cedar plank in water for at least 1 hour. Prepare your grill by scraping it, oiling it, and heating it to medium.
- Carefully rinse and dry each fillet. If you feel any bones when you run your fingers along the fillet, you may wish to remove them. Using needlenose pliers or strong tweezers, gently pull out the bones in the same direction they grew to avoid damaging the fish.
- Place the fish on the plank, brush them with olive oil, and season with salt and pepper. Place the plank over the flame or hot coals. It will burn, but this is normal and a part of the recipe. If you see open flames, turn the heat to low and spray the plank with a little bit of water from a spray bottle. You can also move it to a cooler part of the grill.
- Cook until the juices turn opaque and solid on the top of the fish, approximately 10 minutes for each inch of thickness. Do not overcook. The meat thermometer should read 145˚F. when inserted into the thickest part of the fish.
- At this point, most of the plank will be charred around the fish. Remove the fish to a platter, leaving the skin on the plank, and discard the plank. Spoon the pesto over the fish before serving.
- Parsley and Dill Pesto
- In a food processor or blender, blend the garlic. Add the parsley, dill, preserved lemon, cheese, olive oil, salt, and pepper and pulse until well combined. Scrape down the sides of the bowl and pulse until the mixture forms a smooth paste.
