Time 40m

Yield 4 to 6 servings

Number Of Ingredients 7

Kosher salt
1 head cauliflower (about 2 pounds)
2 tablespoons unsalted butter
1/3 cup panko breadcrumbs
1/4 cup freshly grated Parmesan
1 tablespoon chopped fresh basil
One 8-ounce block white Cheddar cheese, cut into 1/2-inch logs (about 20 pieces)

Steps:

  • Preheat the oven to 400 degrees F.
  • Bring a large pot of water to a boil over high heat. Sprinkle generously with salt. Trim the base of the cauliflower so the stem is flat to the head but without cutting off any florets. Blanch the cauliflower until just beginning to soften, 8 to 10 minutes. Remove to a plate to cool slightly.
  • In a small skillet, heat the butter until melted. Add the breadcrumbs and 1/2 teaspoon salt and toast until golden brown, about 3 minutes. Set aside to cool completely. Stir in the Parmesan and basil.
  • Gently begin to create space in between the florets and stuff each space with a log of Cheddar. Continue until all the pieces of cheese are used. Press the toasted breadcrumbs on top of the cauliflower. Place in a small baking dish and bake until the cauliflower is tender all the way through and the breadcrumbs are golden, about 20 minutes.

CREAM OF CAULIFLOWER SOUP II

Cream of Cauliflower Soup II image

I make lots of cream soups and this is a good 'basic' recipe. I originally made this in 1990 and always make some modifications - we like lots of garlic as reflected in this recipe!! I also add or substitute other vegetables, i.e., broccoli and spinach. I also use potatoes for thickening rather than cream to keep the fat down.

Yield Makes 8 servings

Number Of Ingredients 12

2 leeks, including 2 inches of green, roots trimmed
2 tablespoons olive oil
2 tablespoons unsalted butter
1 celery rib, with extra leaves, coarsely chopped
2 tablespoons finely minced garlic
2 teaspoons curry powder
2 teaspoons ground ginger
6 cups chicken or vegetable broth (more if necessary)
Juice of half a lemon
1 head cauliflower, cored and broken into florets
1 cup half-and-half
Salt and freshly ground black pepper, to taste

Steps:

  • 1. Cut leeks in half lengthwise. Wash to remove dirt. Pat dry and thinly slice crosswise.
  • 2. Heat the oil with the butter in a heavy pot over low heat. Wilt the leeks and celery with leaves until softened, 10 minutes; add garlic during the last 5 minutes.
  • 3. Stir in the curry powder and ginger, and cook over very low heat to permeate the vegetables, 1 minute.
  • 4. Add the broth, lemon juice, and cauliflower florets. Raise the heat to high and bring to a boil; reduce the heat and simmer, partially covered, until the cauliflower is very tender, 15 minutes. Cool slightly.
  • 5. Purée in a food processor until very smooth, adding half-and-half through the feed tube. Add extra broth for desired consistency. Season with salt and pepper.

Tips:

  • Choose the right cauliflower: For the best flavor and texture, select a cauliflower head that is firm, heavy for its size, and has tightly packed florets. Avoid heads with brown spots or blemishes.
  • Roast the cauliflower before blending: Roasting the cauliflower in the oven caramelizes the natural sugars and brings out its nutty flavor. This step is essential for creating a rich and flavorful soup.
  • Use a high-powered blender: A high-powered blender, such as a Vitamix or Blendtec, will create a smooth and velvety soup. If you don't have a high-powered blender, you can use a regular blender, but you may need to blend the soup in batches.
  • Add flavor enhancers: To enhance the flavor of the soup, add ingredients such as garlic, onion, celery, and herbs. You can also add a pinch of cayenne pepper or red pepper flakes for a bit of heat.
  • Garnish before serving: To make the soup more visually appealing, garnish it with fresh herbs, such as chives, parsley, or cilantro. You can also add a drizzle of olive oil or a sprinkle of grated Parmesan cheese.

Conclusion:

Cauliflower soup is a delicious and versatile dish that can be enjoyed as a starter, main course, or side dish. It is also a healthy and nutritious soup, as it is low in calories and fat and high in vitamins and minerals. With its creamy texture, rich flavor, and endless possibilities for customization, cauliflower soup is a must-try for soup lovers of all ages.
