Tips:

  • For the best results, use fresh, high-quality ingredients. Choose shrimp that are firm and opaque, and peas that are bright green and plump.
  • If you don't have time to cook the shrimp yourself, you can use pre-cooked shrimp from the grocery store. Just be sure to thaw them completely before using.
  • To save time, you can use frozen peas instead of fresh peas. Just thaw them in the refrigerator overnight or in the microwave on the defrost setting.
  • If you don't have roasted cashews on hand, you can make your own by roasting raw cashews in a preheated oven at 350 degrees Fahrenheit for 10-12 minutes, or until golden brown.
  • To make the salad dressing, you can use either white wine vinegar or lemon juice. If you use lemon juice, you may want to add a little bit of sugar to balance out the tartness.
  • This salad is best served chilled. You can make it ahead of time and store it in the refrigerator for up to 2 days.

Conclusion:

Cashew shrimp and pea salad is a delicious and refreshing dish that is perfect for any occasion. It is easy to make and can be tailored to your own personal taste. Whether you are looking for a light lunch or a hearty dinner, this salad is sure to please.
