¼ cup butter
2 ounces uncooked spaghetti, broken
¼ cup minced onion
½ teaspoon minced garlic
1 ¼ cups uncooked jasmine rice
2 ¼ cups vegetable broth
salt and pepper to taste
½ pound fresh asparagus, trimmed and cut into 2 inch pieces
½ cup cashew halves

Steps:

  • Melt butter in a medium saucepan over medium-low heat. Increase heat to medium, and stir in spaghetti, cooking until coated with the melted butter and lightly browned.
  • Stir onion and garlic into the saucepan, and cook about 2 minutes, until tender. Stir in jasmine rice, and cook about 5 minutes. Pour in vegetable broth. Season mixture with salt and pepper. Bring the mixture to a boil, cover, and cook 20 minutes, until rice is tender and liquid has been absorbed.
  • Place asparagus in a separate medium saucepan with enough water to cover. Bring to a boil, and cook until tender but firm.
  • Mix asparagus and cashew halves into the rice mixture, and serve warm.

1 ½ cups uncooked long grain white rice
1 chopped onion
1 cup chopped carrot
1 cup golden raisins
3 cups chicken broth
¾ cup uncooked wild rice
2 cups frozen green peas
1 (4 ounce) jar diced pimento peppers, drained
1 cup cashews
1 teaspoon salt
ground black pepper to taste

Steps:

  • Melt margarine in a large saucepan over medium-high heat. Saute the long grain rice, onion, carrot and raisins for 3 to 5 minutes or until onion is tender. Pour in the broth and bring to a boil. Reduce heat to low, cover pan and simmer for 20 to 25 minutes.
  • Meanwhile, in a saucepan bring 1 1/2 cups salted water to a boil. Add wild rice, reduce heat, cover and simmer for 45 minutes. Drain and set aside.

I paid for the empty bag and immediately wrote this recipe based on the ingredients of those nuts. This may look like Chinese Take-Out but the maple, chipotle flavor makes for a North-Western American surprise! Leave the nuts raw - they taste buttery and extra sweet. Toasting will develop a deeper flavor, but the sweet butter nuts have a unique texture when eaten raw.

1 tablespoon extra-virgin olive oil
2 tablespoons butter
1 large onion, 1/4 onion finely chopped, 3/4 thinly sliced
2 cups quick cooking brown rice
4 cups chicken stock
2 tablespoons vegetable oil
2 pounds chicken meat: tenders, boneless, skinless breasts or boneless, skinless thighs, cut into 2-inch pieces
2 tablespoons grill seasoning blend (recommended: Montreal Steak Seasoning blend by McCormick)
2 to 3 tablespoons tamari dark soy sauce, eyeball it
4 cloves garlic, chopped
1 red bell pepper, seeded and thinly sliced

Steps:

  • In a medium pot over medium heat combine 1 tablespoon extra-virgin olive oil, 1 turn of the pan, and 1 tablespoon butter. When butter melts into oil, add in the chopped onion, cook 2 minutes, then add rice and cook 3 minutes more. Add stock and cover the pot. Raise heat to bring stock to a rapid boil. Once the stock boils, reduce heat to low and cook, stirring occasionally, until rice is tender, 17-18 minutes.
  • While rice cooks, make the chicken. Heat a large skillet over high heat. Add vegetable oil, 2 turns of the pan, then the chicken. Season the chicken with grill seasoning. Brown the chicken on both sides, season with soy sauce then move off to one side of the pan. Add the remaining onions, garlic and peppers. Cook 2 to 3 minutes then add water chest nuts and green peas and mix vegetables and meat together. Add the chipotles and cumin. Toss to coat. Glaze the mixture with honey and maple syrup and turn off the heat. Add in the chopped cilantro or parsley and the cashew nuts.
  • Top rice with cashew chicken and serve.

2 cups chicken stock
2 tablespoons canola, vegetable or other high-temperature cooking oil
1 cup white rice
1 small bunch scallions, thinly sliced on an angle
6 chicken cutlets or chicken thighs or 6 thin pork loin chops
1 large bundle broccolini or 1 head broccoli
Salt
1 1/2 inches fresh gingerroot, peeled and finely chopped or grated
2 to 3 garlic cloves, finely chopped
3 tablespoons tamari (aged soy sauce)
1/3 cup orange marmalade
1/2 cup roasted unsalted cashews

Steps:

  • In a sauce pot, heat 1 1/2 cups of the stock and 1 tablespoon of the vegetable oil. Bring to a boil and stir in the rice. Lower the heat and bring to a bubble, cover, and simmer until the rice is tender, about 18 minutes. Fluff with a fork and add the scallions.
  • Meanwhile, thinly slice the chicken or pork.
  • Trim the broccolini or broccoli and cut into 2-inch pieces or florets. Bring 2 inches of water to a boil in a shallow pot or deep skillet over medium heat. Salt the water and cook the broccolini or florets until tender-crisp, about 3 to 4 minutes. Drain.
  • Heat a large skillet over high heat while the broccolini cooks. Add 1/2 tablespoon of the oil and when it begins to smoke or ripple, add the chicken and brown it for 5 to 6 minutes, turning once, then transfer it to a plate. Add the remaining 1/2 tablespoon of oil to the pan, stir in the ginger and garlic and cook for 1 minute. Add the tamari, the marmalade, and the remaining 1/2 cup of chicken stock. Slide the chicken, broccolini, and cashews into the pan and stir to combine with the sauce. Simmer for another 1 to 2 minutes.
  • Scoop the chicken mixture into serving dishes, top with a scoop of rice, and serve.

1/2 cup water
6 slices fresh ginger, sliced about 1/4 inch thick
2 tablespoons lime juice
2 serrano chilies, cut in half
8 cloves garlic, peeled

1/2 cup packed fresh cilantro leaves
2 tablespoons fresh mint leaves
1 teaspoon salt
1 tablespoon natural sugar
1 cup toasted cashews
12 ounces uncooked rice noodles
3 green onions, finely minced
lime wedge
torn cilantro leaf (optional)
finely minced green onion (optional)
minced cashews, lightly toasted (optional)

Steps:

  • Combine the coconut milk and water in a medium-sized saucepan.
  • Add the ginger, lime juice, chilies, garlic, coriander, cilantro, mint, and salt, and bring to a boil.
  • Lower the heat to a simmer, and cook uncovered for 10 minutes.
  • Remove from the heat and stir in the sugar.
  • At this point, you can let the sauce steep for a stronger flavor for a few hours, or even overnight, or continue on with the recipe.
  • Strain the mixture through a fine sieve into a bowl.
  • Press all the liquid from the garlic, ginger, cilantro, etc.
  • ,then discard the solids that remain in the sieve.
  • Place the cashews in a blender, and then pour in the coconut milk mixture.

  • Heat a potful of water to a boil.
  • Add the noodles, and cook them according to the directions on the package.
  • Drain the noodles, rinse, and drain again, then transfer to a large, shallow serving bowl.
  • Immediately add the minced green onion and all the sauce.

This dish is loosely based on an Indo-Chinese garlic noodle dish. Here, a combination of Italian and Chinese condiments like cashews, Parmesan, soy sauce and anchovies create a creamy, umami-rich garlic sauce. This recipe uses rice noodles, but you could use egg noodles, ramen or any type of noodle. Since Parmesan, anchovies and soy sauce tend to fall on the saltier side, taste as you go and season the sauce accordingly. Feel free to reduce the amount of garlic, as it leans toward the generous side. These noodles are best eaten warm as soon as they're mixed with the sauce.

  • Mix the first 7 ingredients and bring to a boil.
  • Cool; divide in half.
  • Use half to marinade 1-1 1/2 pounds boneless chicken breast or chicken breast tenders over night. Refrigerate other half to be used later.
  • Prepare white rice for 4 people, as instructed on bag.
  • Remove chicken from marinade and discard marinade. Grill or broil chicken while rice is cooking.
  • Stir can of crushed pineapple (drained) and about 3/4 cup of cashew pieces into cooked rice.

1 cup wild rice
4 cups chicken broth
3 tablespoons olive oil
1 1/2 cups red bell peppers, chopped
3/4 cup cashews, coarsely chopped
2 green onions, sliced
3 tablespoons seasoned rice vinegar or 3 tablespoons apple cider vinegar
2 tablespoons olive oil
1 tablespoon sesame oil
1 clove garlic, minced
1/4 teaspoon salt
1 dash fresh ground pepper
lettuce leaf, for serving

Steps:

  • In a strainer, rinse the wild rice under cold water, drain well.
  • Into a 3 qt saucepan, put the wild rice and chicken broth; bring to a boil over a high heat.
  • Reduce the heat and simmer, covered, for 45-50 minutes, until tender.
  • Drain off any excess liquid.
  • Set aside Meanwhile, in a medium skillet, heat the olive oil over medium high heat, add the bell peppers and cook for 3-5 minutes, or until tender.
  • Add the cashews and green onions, cook for 2-3 minutes longer, or until the nuts begin to brown.
  • Remove from heat In a large bowl, toss together the wild rice and bell pepper mixture.
  • For the dressing; In a jar with a tight-fitting lid, combine the vinegar, olive and sesame oils, garlic, salt and pepper.
  • Cover and shake until blended; pour the dressing over the salad and toss until evenly coated.
  • Cover and refrigerate salad for at lease 2 hours or up to overnight to allow the flavors to blend.
  • To serve the salad, spoon it onto a lettuce lined platter.

I found this recipe on allrecipes.com and adapted it to include my favourite veggie, broccoli! You can also make this with asparagus. Butter lends a fantastic flavour to the recipe, so preferably, don't substitute it with any else. Although I've tried this only with water, using vegetable broth would add even more zing!

1/4 cup butter (Don't substitute)
2 ounces uncooked spaghetti, broken
1/4 cup onion, minced
1/2 teaspoon minced garlic
1 1/4 cups long-grain rice or 1 1/4 cups jasmine rice
2 1/4 cups vegetable broth or 2 1/4 cups water (I use water)
salt and pepper
1/2 lb broccoli floret
1/2 cup cashews, halves, roasted

Steps:

  • Melt butter in a medium saucepan over medium-low heat.
  • Increase heat to medium, and stir in spaghetti, cooking until coated with the melted butter and lightly browned.
  • Stir onion and garlic into the saucepan, and cook about 2 minutes, until tender.
  • Stir in rice, and cook for about 5 minutes.
  • Pour in vegetable broth and season mixture with salt and pepper.
  • Bring the mixture to a boil, cover, and cook 20 minutes, or until rice is tender and liquid has been absorbed.
  • While the rice is cooking, place broccoli in a separate medium saucepan with enough water to cover.
  • Bring to a boil, and cook until tender but firm; drain excess water.
  • Mix broccoli and cashew halves into the rice mixture, and serve warm.

2 Tbsp. honey
1 (1-pound)pork tenderloin, trimmed and cut into 1/2 in. cubes
1 Tbsp. canola oil, divided
2 cups sliced mushrooms (about 4 oz.)
1 cup chopped onion
1 Tbsp. grated peeled fresh ginger
2 garlic cloves, mince
2 cups sugar snap peas, trimmed
1 cup chopped red bell pepper

Steps:

  • 1. Cook the rice according to package directions, omitting salt and fat. Stir in 1/3 c. chopped green onions, chopped dry-roasted cashews, and salt; set aside, and keep warm. 2. Combine 2/3 c. chicken broth, 1 Tbsp. cornstarch, 2 Tbsp. soy sauce, and honey in a small bowl; set aside. 3. Combine pork, remaining 1 tbsp. cornstarch, and the remaining 1 Tbsp. soy sauce in a bowl, tossing well to coat. Heat 2 tsp. oil in a large nonstick skillet over medium-high heat. Add pork; saute 4 mins., or until browned. Remove from pan. 4. Add remaining 1 tsp. oil to pan. Add mushrooms and 1 c. onion; saute 2 mins. Stir in ginger and garlic; saute 30 mins. Add peas and bell pepper to pan; saute 1 min. Stir in pork; saute 1 min. Add reserved broth mixture to pan. Bring to a boil; cook 1 min. or until thick, stirring constantly. Serve over cashew rice.

500 g potatoes, halved
2 tablespoons olive oil
1 onion, chopped
2 green peppers, cored, deseeded and chopped
2 teaspoons mustard seeds
1/2 teaspoon turmeric
1 tablespoon ginger, grated
4 garlic cloves, crusted
5 g curry leaves
4 bananas, large under-ripe, sliced
300 ml water
75 g coconut cream, cut into small pieces
4 teaspoons tamarind paste
salt and pepper
300 g basmati rice
125 g roasted cashew nuts, chopped

Steps:

  • Put the potatoes into a saucepan, cover with water, bring to the boil and simmer for 10-15 mintes until just tender - drain.
  • Meanwile heat the olive oil in a large saucepan, add the onion and peppers, cover and cook gently for 10 minutes, stirring from time to time.
  • Boil your basamati rice until soft and fluffy, set aside keeping it warm.
  • Add the mustard seeds, stirring over the heat for a minute or two until they start to pop, then stir in the turmeric, ginger, garlic and curry leaves and cook for a furter minute or two.
  • Stir in the drained potatoes and the bananas, then add the water, coconut cream and tamarind paste.
  • Bring to the boil, then leave to cook gently for 5-10 minutes until the sauce is thick and the flavours blended - season with salt and pepper.
  • Quickly add the cashews to the rice and fork through, then serve the rice and curry together on a warmed plate.

1/8 teaspoon turmeric

3 tablespoons vegetable oil
5 cups cooked rice, cold
