2 cups sliced cremini mushrooms
1 tablespoon fresh thyme leaves
3 cloves garlic, minced
1 tablespoon all-purpose flour
1 cup low-fat milk
½ cup crumbled goat cheese

Steps:

  • Heat 2 tablespoons olive oil in a 12-inch nonstick skillet over medium-high heat. Add shallots; cook until deep golden, stirring occasionally, 4 to 5 minutes. Drain shallots on paper towels, reserving drippings in skillet.

1 tablespoon butter
1 medium red onion, cut in thin strips

1 lb chicken breast, cut into strips
3 tablespoons water
5 tablespoons corn oil
2 tablespoons cornstarch
12 ounces fresh green beans
8 ounces sliced king oyster mushrooms (Wegmans)
1 cup unsalted dry roasted whole cashews
1 tablespoon garlic, minced
1 tablespoon ginger, minced
1 cup wegman's stir-fry sauce

Steps:

  • . Cut chicken into strips, place in small bowl.Add 1 T water and 1 T oil, work into chicken with hands until absorbed. Sprinkle chickec with 2 T cornstarch, work with hands to coat all the chicken. Cover, chill in fridge for 30 minutes.
  • Blanch green beens in boiling water for 1 1/2 minutes. Drain and set aside.
