2 cups fresh cilantro leaves
1 cup fresh parsley leaves
3 tablespoons lime juice
1 cup chili-lime cashews
½ cup olive oil
1 teaspoon salt
1 teaspoon black pepper
1 teaspoon cayenne pepper
½ cup grated Asiago cheese

Steps:

  • Put the cilantro, parsley, lime juice, cashews, olive oil, salt, pepper, cayenne pepper, and grated cheese into the bowl of a food processor. Pulse until mixture is smooth, 8 to 10 pulses. If mixture is too thick, add more olive oil; if too thin, add more cashews.
  • Pour into 4 one-cup freezer containers. Use one container within a few days; freeze the others for later.

1 stalk celery, chopped
2 medium onions, chopped
1 green bell pepper, chopped
2 cups canned tomatoes, with juice
1 (15 ounce) can kidney beans, in water (you may use 2 cans, depending on consistency you wish to achieve)
1 teaspoon black pepper
1 teaspoon minced basil
1 teaspoon minced oregano
1/2-1 tablespoon chili powder
1/4 teaspoon cumin
1 bay leaf
1 -2 tablespoon cider vinegar
1/2-1 cup cashews
1/4 cup parsley, chopped

Steps:

  • Chop the celery, onions, and bell pepper. Sauté them in olive oil until tender, about 10 minutes.
  • Add tomatoes(with juice) and beans(with juices) and all spices. Cover and simmer for 5-10 minutes, until pleased with thickness. Add vinegar and cashews.

3 tablespoons olive oil
1 white onion, chopped
2 teaspoons minced garlic
1 teaspoon sofrito
1 (20 ounce) package ground turkey
1 (28 ounce) can whole peeled tomatoes
1 cup water, plus more if desired
¾ (6 ounce) can tomato paste, divided
1 cup chopped cashews
2 teaspoons chili powder, or more to taste
1 teaspoon ground cumin
1 teaspoon unsweetened cocoa powder
1 teaspoon sea salt, or to taste
1 teaspoon ground black pepper, or to taste

Steps:

  • Heat olive oil in a heavy-bottomed saucepan with a lid over medium-high heat. Saute onion in hot oil until fragrant, about 3 minutes. Stir garlic and sofrito into the onion; saute until the garlic is fragrant, about 3 minutes more. Push the mixture to the side of the saucepan.
