This is from a great cookbook called "Breast Wishes" which is put together by some ladies from a small town to raise money for breast cancer research! They even test all their recipes before they put them in! Haven't hit a bad one yet! I've even subbed in peanuts for the cashews when I was out - still yummy!

1 head iceberg lettuce
3 tablespoons hoisin sauce
2 tablespoons rice vinegar
1 tablespoon water
2 boneless skinless chicken breasts, cut into strips
1 teaspoon kosher salt
2 tablespoons canola oil
1 tablespoon fresh ginger, peeled and finely chopped
1 medium carrot, julienned (about 1 cup)
2 green onions, chopped
1/2 cup roasted salted cashews

Steps:

  • Stir hoisin, vinegar, and water in a small bowl until well blended and set aside.
  • Season chicken with salt and set aside.
  • Heat wok on high until hot, then add oil, swirling to coat then add ginger, stirring until fragrant (about 10 sec).
  • Add chicken and stirfry for about a minute then add carrot and stirfry another 2 minutes or until chicken is just cooked and carrots are tender.
  • Add hoisin mixture and green onions and toss until heated through.
  • Remove from heat and add cashews.
  • Spoon mixture into lettuce leaves, wrap up, and enjoy!

12 ounces boneless skinless chicken breasts
1 1/2 tablespoons canola oil
1 cup onion, diced
2 garlic cloves, minced
1 teaspoon soy sauce
1/4 cup cashews, chopped
2 tablespoons soy sauce
1 tablespoon rice vinegar
1 tablespoon brown sugar
1/4 teaspoon ground red pepper
1/4 teaspoon ground ginger
1 teaspoon sesame oil
8 leaves iceberg lettuce

Steps:

  • Mix all stir fry sauce ingredients. Set aside.
  • Heat oil over medium high heat and add chicken. Brown chicken (4-5 minutes).
  • Remove chicken from pan and add onions, garlic, and 1 tsp soy sauce. Brown.
  • When onions are tender, return chicken to pan and add cashews. Stir fry for a minute or two to reheat chicken.
  • Add stir fry sauce and saute for a few more minutes.
  • Remove from heat and spoon into lettuce leaves to serve.

6 Rhodes Dinner Rolls, thawed to room temperature
3-4 cups shredded cooked chicken
1/2 cup mayonnaise
2 teaspoons rice vinegar
2 teaspoons sugar
1 teaspoon sesame oil
1 teaspoon Dijon mustard
1/4-1/2 cup cashews
3 tablespoons sliced green onions
1/2 cup mandarin oranges, divided
1/4 cup finely chopped red cabbage
salt & pepper to taste

Steps:

  • Spray counter lightly with non-stick cooking spray. Roll each dinner roll into an 8 inch circle. Cover with plastic wrap and let rest for about 20 minutes. In a large bowl, combine the chicken, mayonnaise, vinegar, sugar, sesame oil and mustard. Fold in the cashews, green onions, half of the oranges and the cabbage and mix well. Salt and pepper to taste. Remove wrap from flattened rolls and brush with olive oil. Cook on a grill heated to medium heat for about 1 minute on each side. Remove from grill and cool slightly.
