1 cup beef broth (or beef consumme)
1/2 cup low sodium soy sauce
1/3 cup dark brown sugar

Time 20m

Yield 4 serving(s)

Number Of Ingredients 14

1 teaspoon sesame oil or 1 teaspoon canola oil
3 green onions, sliced, separate the white parts from the green parts
4 cups broccoli, chopped
2 cups mushrooms, chopped
1 cup snow peas
2 cups bok choy, chopped
1/2 cup cashews, chopped
1/4 cup water
1 tablespoon reduced sodium soy sauce
1 teaspoon freshly grated gingerroot
1 teaspoon honey
1 tablespoon cornstarch
1 teaspoon pepper
2 garlic cloves, finely chopped

Steps:

  • In a small bowl, mix together all ingredients for the sauce. Set aside.
  • Heat a large fry pan or wok over medium-high heat. Add cashews and roast for 2 to 3 minutes. Stirring frequently. Careful not to burn them. Set aside with the green parts of the green onion.
  • In the same pan, add the sesame oil and heat over medium-high heat. Add the white parts of the green onion, broccoli and mushrooms. Sauté for about 5 minutes or until broccoli is starting to become tender. Add a few tablespoons of water, if needed, to stop browning or burning.
  • Add the snow peas and bok choy and sauté for 2 minutes.
  • Add the sauce and sauté for about 3 to 5 minutes or until the sauce thickens. Remove from heat and add in the cashews and green parts of the green onion.
  • Serve immediately with brown rice.

Tips:

  • Mise en Place: Before you start cooking, make sure you have all your ingredients and tools ready. This will help you stay organized and prevent any scrambling during the cooking process.
  • Use High-Quality Ingredients: The quality of your ingredients will greatly impact the final dish. Choose fresh, high-quality vegetables, tender beef, and flavorful sauces.
  • Marinate the Beef: Marinating the beef in a flavorful mixture of soy sauce, cornstarch, oil, and spices helps tenderize it and infuse it with flavor.
  • Stir-Fry in Batches: If you're cooking a large amount of food, stir-fry it in batches to prevent overcrowding the pan. This will ensure that the food cooks evenly and doesn't become soggy.
  • Use a Wok: A wok is the ideal cookware for stir-fries as it allows for quick and even heat distribution. If you don't have a wok, you can use a large skillet or sauté pan.
  • Control the Heat: Stir-fries require high heat, but it's important to control the temperature carefully. Too much heat can burn the food, while too little heat will result in soggy vegetables.
  • Add the Sauce Last: Add the sauce towards the end of the cooking process to prevent it from burning or losing its flavor.
  • Serve Immediately: Stir-fries are best served immediately after cooking. This ensures that the vegetables remain crisp and the beef is tender and juicy.

Conclusion:

Cashew beef with broccoli stir-fry is a delicious, healthy, and versatile dish that can be enjoyed for lunch, dinner, or as a quick and easy weeknight meal. With its tender beef, crisp vegetables, and flavorful sauce, this stir-fry is sure to satisfy your taste buds. So gather your ingredients, heat up your wok, and get ready to create a culinary masterpiece!
