2 pounds of sweet potato, peeled and cubed
¾ cup milk
1 teaspoon vanilla
½ cup brown sugar, divided
1 stick butter, divided
1 tablespoon cinnamon
¼ teaspoon clove
¼ teaspoon nutmeg

Steps:

  • Preheat oven to 350 degrees Fahrenheit, and bring water to a boil in a medium-sized pot.
  • Add cubed potatoes and boil until you can easily pierce cubes with a fork.
  • Drain and put cubed cooked potatoes into a large bowl, then add milk, vanilla, ¼ cup of brown sugar, ½ stick of butter, cinnamon, cloves, and nutmeg, and stir well until all ingredients are thoroughly mixed.
  • Place the contents from the bowl into a 8x8-inch casserole dish sprayed with non-stick spray.
  • Slice the other half of the stick of butter into pats (approximately 6) and place pats of butter on top of the potato mixture, then sprinkle the other ¼ cup of brown sugar over the butter.
  • If using, sprinkle the pecans on top and place in a preheated oven.
  • Bake for 20 minutes until butter and brown sugar have melted together, then serve piping hot.

2 eggs
1/2 cup brown sugar, packed
1/4 cup butter, melted

1 1/2 cups cooked, peeled and mashed sweet potatoes
1 heaping teaspoon all-purpose flour
1 cup milk (canned, half and half, cream or whole milk)
1 cup sugar
3 egg yolks
1 teaspoon vanilla
1 teaspoon ground nutmeg
2 tablespoons margarine, melted
4 cups all-purpose flour
1 3/4 cups shortening (butter flavored)
2 teaspoons salt
1 tablespoon sugar
1 large egg
1/2 cup water
1 tablespoon white vinegar

Steps:

  • Preheat oven to 350 degrees F.
  • Roll out 1 pie crust and place it in a pie plate. Mix all of the remaining ingredients together and pour into the unbaked pie crust. Bake for 45 minutes or until pie is firm. Allow to cool completely.
  • Mix flour, shortening, salt and sugar together with a pastry blender until well blended. Slightly beat egg, water and vinegar together with a whisk and pour over the well blended flour mixture. 4 large sweet potatoes, peeled and cut into 1/4-inch-thick rounds
8 tablespoons (1 stick) salted butter
2 cups granulated sugar
One 20-ounce can crushed pineapple
1 teaspoon ground cinnamon
1 teaspoon ground cloves
Pinch kosher salt
1 teaspoon pure vanilla extract

Steps:

  • Preheat the oven to 375 degrees F. Place the sweet potatoes in a 2-quart baking dish. Set aside.
  • In a medium pot, melt the butter over medium-low heat. Add the sugar and stir until smooth. Drain the pineapple in a strainer, reserving the juice. Stir in about half the pineapple and half the pineapple juice; reserve the rest of the pineapple and juice for another use. Stir in the cinnamon, cloves and salt.
