3 1/2 cups/450 grams all-purpose flour, plus more for rolling
2 teaspoons/10 grams ground cardamom
1 teaspoon/5 grams kosher salt
14 ounces/400 grams unsalted butter (3 1/2 sticks), at room temperature
1 1/4 cups/150 grams confectioners' sugar, plus more for dusting
2 large egg whites
1/4 cup/20 grams sliced almonds

Steps:

2 1/2 cups all-purpose flour
3/4 teaspoon ground cardamom
1/2 teaspoon ground cinnamon
1/2 teaspoon kosher salt
1 1/2 cups powdered sugar, divided
1 cup pecans
1 cup (2 sticks) unsalted butter, room temperature
1 tablespoon vanilla extract

Steps:

  • Arrange racks in lower and upper thirds of oven; preheat to 350°F. Line 2 baking sheets with parchment paper. Whisk first 4 ingredients in a medium bowl. Combine 1/2 cup sugar and pecans in a food processor; pulse until coarse meal forms. Using an electric mixer, beat butter and vanilla in a medium bowl until creamy, 2-3 minutes. 1/4 cup warm water (110° to 115°)
1 teaspoon plus 1 cup sugar, divided
2 cups warm milk (110° to 115°)
3/4 cup butter, softened
1-1/2 teaspoons ground cardamom
1 teaspoon salt
2 eggs, lightly beaten
7 to 8 cups all-purpose flour
Additional butter, melted

Steps:

  • In a large bowl, dissolve yeast in warm water. Add 1 teaspoon sugar; let stand for 5 minutes. Add the milk, butter, cardamom, salt and remaining sugar. Turn onto a lightly floured surface; divide into six pieces. Roll each piece into a 10-in. circle; brush with melted butter. Cut each circle into 12 wedges. Roll up each wedge from the wide end; place pointed end down 2 in. apart on greased baking sheets. Curve ends down to form crescents. Cover and let rise until doubled, about 30 minutes. Bake at 400° for 12-15 minutes or until golden brown. Remove to wire racks. Brush with melted butter if desired.
