Time 1h45m

Yield 24 pretzel turtles

Number Of Ingredients 4

24 pecan halves
24 mini pretzel twists
24 individually wrapped soft caramel squares
8 ounces good-quality milk chocolate, melted

Steps:

  • Preheat the oven to 325 degrees F.
  • Put the pecan halves on a baking sheet in a single layer and bake, shaking the sheet once halfway through, until lightly toasted, 5 to 6 minutes. Transfer the nuts to a plate to cool.
  • Line the baking sheet with parchment paper or a silicone baking mat. Arrange the pretzels neatly on the baking sheet, then top each pretzel with an unwrapped caramel. Bake until the caramels soften (but are definitely not melting), 4 to 5 minutes. Remove the baking sheet from the oven and gently press a pecan half onto each caramel, just enough for the caramel to fill the pretzel. Set aside to cool completely.
  • Remove the cooled pretzel/caramels from the baking sheet. Spoon 24 small dollops (1 1/2-teaspoon helpings) of the melted chocolate all over the baking sheet, then lightly drop a pretzel onto the middle of each dollop, making sure the pretzel is centered. Allow them to cool completely before serving (you can hasten this along in the fridge).

PEANUT BUTTER, CARAMEL & PRETZEL BITES

Peanut Butter, Caramel & Pretzel Bites image

Time 1h

Number Of Ingredients 6

Square Pretzels
15 Unwrapped Caramels
Peanut Butter, creamy or crunchy - your choice!
White Melting Chocolate
1 Tablespoon vegetable oil
Candy sprinkles or colored sugar.

Steps:

  • Place 60 unbroken square pretzels on your work surface. Turn each unwrapped caramel on its side and slice in half. This should give you two square caramels per piece for a total of 30. Place each half on an empty pretzel. Continue doing this until all 15 caramels are cut in half and placed on pretzels. Cook caramels on pretzels in the microwave for 5 seconds and press caramel into pretzel. If caramel will not press into pretzel, cook for additional 5 seconds. Caramel should not be melted, just soft enough to press into the pretzel so they stick together. You'll need to do this in batches. On remaining 30 pretzels, smear each one with peanut butter. Press a peanut butter half pretzel into a caramel half pretzel. Do this to all. You should have 30 peanut butter pretzel sandwiches at this point. Melt chocolate according to package directions. Add vegetable oil to thin the chocolate slightly after it's melted. Place pretzel sandwiches into white chocolate and with a fork gently pick each one up and shake it gently to remove excess chocolate. Place Pretzel bites on wax paper, non-stick foil or a baking mat to cool and dry. Sprinkle candy bits, sprinkles or colored sugar on top of each one as you finish, before they dry. Repeat until all 30 pretzel bites are dipped. Allow to dry fully and devour!

Tips:

  • Use a good quality caramel sauce. This will make a big difference in the overall flavor of the bites.
  • Pretzels should be fresh and crunchy. Stale pretzels will not hold up well in the caramel.
  • Be careful not to overcook the caramel. It should be thick and golden, but not burnt.
  • Let the caramel cool slightly before dipping the pretzels. This will help prevent the caramel from running off the pretzels.
  • Sprinkle the pretzels with sea salt while the caramel is still wet. This will add a nice salty contrast to the sweetness of the caramel.
  • Store the caramel pretzel bites in an airtight container at room temperature. They will keep for up to 2 weeks.

Conclusion:

Caramel pretzel bites are a delicious and easy-to-make treat that is perfect for any occasion. They are a great way to use up leftover pretzels and caramel sauce. These bites are also a great gift idea for friends and family.
