Number Of Ingredients 12

1 egg
1 cup sugar
1/2 cup melted butter
1/2 cup lard
1 T molasses
1/4 cup milk
1 3/4 cups rolled oats (not quick oats)
1 cup raisins
1 1/2 cups flour
1/2 teaspoon soda
1 teaspoon cinnamon
1/2 tsp salt

Steps:

  • Beat the egg, and add all the other ingredients. Mix well. Butter 2 large baking sheets. Bake 350 for 15 min. or so

Tips:

  • Use old-fashioned oats. They hold their shape better than quick-cooking oats and give the cookies a chewy texture.
  • Don't overmix the dough. Overmixing will make the cookies tough. Mix just until the ingredients are combined.
  • Chill the dough before baking. This will help the cookies hold their shape and prevent them from spreading too much.
  • Bake the cookies until they are lightly golden brown. Overbaking will make them dry and crumbly.
  • Let the cookies cool completely before storing them. This will help them keep their shape and flavor.

Conclusion:

These Cape Cod oatmeal cookies are a delicious and easy-to-make treat that is perfect for any occasion. They are chewy, flavorful, and packed with oats and dried fruit. Whether you enjoy them warm from the oven or store them for later, these cookies are sure to be a hit. So next time you are looking for a sweet and satisfying snack, give these Cape Cod oatmeal cookies a try!
