Time 40m

Yield 4-6 serving(s)

Number Of Ingredients 5

2 (15 ounce) cans sweet potatoes
1/2 cup brown sugar
1/4 cup butter or 1/4 cup margarine
1 cup miniature marshmallow
1/4 cup chopped pecans (optional)

Steps:

  • Drain off all but 1/4 cup liquid from potatoes.

  • Add potatoes.
  • Stir to coat.
  • Pour into medium casserole.

  • Add pecans if using.
  • Put in oven and bake at 350 degrees till brown (30 minutes).

Tips:

  • Choose firm, unblemished sweet potatoes: Avoid any potatoes that are soft, bruised, or have signs of sprouting.
  • Pierce the potatoes: Before cooking, use a fork to pierce the potatoes all over. This will help them cook evenly and prevent them from bursting.
  • Use a pressure cooker for faster cooking: If you're short on time, use a pressure cooker to cook the potatoes. This will significantly reduce the cooking time.
  • Add spices and herbs for extra flavor: Feel free to add your favorite spices and herbs to the cooking water to enhance the flavor of the potatoes.
  • Don't overcook the potatoes: Overcooked potatoes will become mushy and lose their texture. Cook them until they are tender but still hold their shape.
