- Place onions, celery, and tomatoes in a large pot; pour in enough water to just cover vegetables; bring to a boil. Reduce heat and simmer until tomatoes are tender, 20 to 30 minutes. Pour tomato mixture through a strainer or food mill, discard solids, and return liquid to the pot; stir sugar and salt into liquid.
- Blend butter and flour together in a blender until smooth and creamy; add tomato juice. Blend until smooth. Pour butter mixture into liquid in the pot. Cook and stir over medium heat just until tomato soup is hot.
- Sterilize the jars and lids in boiling water for at least 5 minutes. Pack the tomato soup into the hot, sterilized jars, filling the jars to within 1/4 inch of the top. Run a knife or a thin spatula around the insides of the jars after they have been filled to remove any air bubbles. Wipe the rims of the jars with a moist paper towel to remove any food residue. Top with lids, and screw on rings.
- Place a rack in the bottom of a large stockpot and fill halfway with water. Bring to a boil and lower jars into the boiling water using a holder. Leave a 2-inch space between the jars. Pour in more boiling water if necessary to bring the water level to at least 1 inch above the tops of the jars. Bring the water to a rolling boil, cover the pot, and process for 20 to 30 minutes.
- Remove the jars from the stockpot and place onto a cloth-covered or wood surface, several inches apart, until cool. Once cool, press the top of each lid with a finger, ensuring that the seal is tight (lid does not move up or down at all). Store in a cool, dark area, and wait at least 12 hours before opening.

- Cover chicken with 3 quarts of water. Add thyme and oregano. Bring to boiling. Simmer covered 1 hour. Remove chicken from the broth. cool. Remove meat from the bones, dice. This recipe may make about 2 quarts. I double or triple it, depending on my carrot supply from my garden. It must be pressure canned. Do not process/ can with cream added. Add cream only when ready to serve. This recipe DOES NOT follow USDA canning rules. If this bothers you, do not continue reading. The concern is that the heat may not penetrate into the middle of the quart jars because the soup is thick. However, I (and many others) have canned it for years with no problem.

- Melt butter in a large, stainless steel stockpot over medium heat. Add garlic, onions, celery, carrots and ginger. Saute for 10 minutes, stirring frequently. Add the stock to the vegetables and bring to a boil. Reduce heat to a lively simmer and cook until the carrots are tender, approximately 30-35 minutes.
- Remove from the heat. Add coriander, ground ginger and honey. Puree the soup in pot using an immersion blender or work in batches with a regular blender until smooth.
- Ladle the hot soup into sterilized 1 quart jars, leaving 1" headspace. Wipe rims to clean, place lid and ring on jar. Pressure can for 75 minutes at 10 pounds of pressure. After pressure drops, remove from canner. Check seals, label and store.
- When ready to serve, add 1/2 cup heavy cream to each quart of soup. Stir, heat and serve.

- Makes approx 2-1/2 cups of "condensed" cream of chicken soup, which will work for most recipes calling for canned soup.
- Place the chicken in the water, bring to a boil and immediately lower to simmer.
- Add the carrot, onion and celery.
- Simmer for 1 hour.
- Carefully remove the vegetables and chicken from the broth.
- Place the vegetables in a food processor, remove the meat (not fat) from the bones, and place the meat in the food processor as well.
- Process into a puree, then return to the sauce pan with any remaining broth.
- Bring to a boil.
- Mix the tapioca flour with the half and half and stir into the contents of the sauce pan.
- When thickened, remove from heat and allow to cool.
SOUR CREAM CHICKEN ENCHILADAS (NO CANNED SOUP)

- Place chicken in a large saucepan and cover with water. Season to taste. (I usually add salt, pepper, poultry seasoning, seasoned salt, garlic powder, etc.) Boil chicken until cooked through and tender.
- Remove chicken, saving broth. Shred or chop the chicken into small pieces. I often grind it in my food processor as we like the pieces very small.
- Place chicken in a large bowl and add 3 cups cheese and the onions. Add salt to taste. Mix well.
- Place a small amount of chicken mixture onto each tortilla and roll. Place in a casserole dish. Try not to crowd too many into one pan.
- In a saucepan, melt the butter. Stir in the green chilies and then the flour. (If you want it spicier, you can add some chopped or pickled jalapenos to this mixture.).
- Slowly stir in 4 cups of reserved chicken broth. Cook until the mixture becomes slightly thick, like gravy.
- Remove from heat and stir in sour cream.
- Pour the sauce over the enchiladas. Cover and cook at 350 degrees for 30 minutes.
- Uncover, top with remaining cheese and return to oven for another 5 minutes to melt the cheese.

- In one bowl, combine the cream soup ingredients and in another bowl combine the onion soup ingredients. Spray a 9"×13" baking dish with cooking spray and place the uncooked rice across the bottom. Combine the water and chicken soup base (or use an equivalent amount of chicken stock) with 1/2 of the onion soup. Pour over over the rice. Place the chicken parts throughout the pan with the pieces not touching. If you use chicken with skin on it, place the skin side up. Sprinkle the remaining onion soup substitute over the chicken.
