When watching a movie, you've got to have popcorn....and something sweet! So, I've combined both movie theater treats with these caramel-flavored popcorn balls that get a dunk in chocolate and then are rolled in crushed cookies, peanuts, candy bars or toffee. It's the best of both worlds!

Time 2h50m

Yield 12 popcorn balls

Number Of Ingredients 13

1 stick (8 tablespoons) unsalted butter
1/2 cup firmly packed light brown sugar
1/2 cup granulated sugar
1/2 cup light corn syrup
1 cup sweetened condensed milk
1/2 teaspoon kosher salt
2 teaspoons vanilla extract
18 cups popped salted popcorn (start with 2/3 cup kernels)
Nonstick cooking spray, for greasing hands
Two 12-ounce packages milk chocolate chips
2 tablespoons coconut oil or shortening
1 1/2 cups crushed salted dry-roasted peanuts
Additional optional toppings: crushed buttery finger candy bars, chopped toffee, crushed Oreos

Steps:

  • Combine the butter, light brown sugar, granulated sugar and corn syrup in a medium heavy-bottomed saucepan over medium heat. Bring to a boil and cook to 240 degrees F (hard ball stage), about 11 minutes. Stir in the sweetened condensed milk and salt and boil 1 minute more. Remove from the heat and stir in the vanilla.
  • Pour the caramel over the popcorn in a large bowl and stir to coat evenly. Shape into 12 balls using buttered or greased hands.
  • Combine the chocolate chips and coconut oil in a small microwave-safe bowl. Microwave on high in 30-second intervals until melted. Place the peanuts in a shallow dish. Dip the popcorn balls halfway into the chocolate, then dip in the crushed peanuts (or other toppings). Remove to a parchment paper-lined baking sheet to harden, about 2 hours.

Tips:

  • Choose the right popcorn: For the best results, use fresh, unpopped popcorn kernels. Avoid using pre-popped popcorn or popcorn that has been sitting around for a while, as it may not pop as well.
  • Use a large pot or Dutch oven: A large pot or Dutch oven will give the popcorn plenty of room to pop and expand. This will help to prevent the popcorn from burning or sticking to the bottom of the pot.
  • Add the oil and kernels to the pot: Add enough oil to coat the bottom of the pot, then add the popcorn kernels. Shake the pot to distribute the kernels evenly.
  • Heat the pot over medium-high heat: Heat the pot over medium-high heat until the popcorn starts to pop. Once the popcorn starts popping, reduce the heat to medium-low and continue to shake the pot.
  • Listen for the popping to slow down: Once the popping slows down to a few seconds between pops, remove the pot from the heat. This will help to prevent the popcorn from burning.
  • Transfer the popcorn to a large bowl: Pour the popcorn into a large bowl and let it cool slightly.
  • Melt the candy bars: In a microwave-safe bowl, melt the candy bars in 30-second intervals, stirring in between, until smooth.
  • Pour the melted candy bars over the popcorn: Drizzle the melted candy bars over the popcorn and stir to coat evenly.
  • Add the toppings: Sprinkle the popcorn with your favorite toppings, such as chopped nuts, dried fruit, or candy.
  • Let the popcorn cool and harden: Let the popcorn cool and harden for at least 30 minutes before serving.

Conclusion:

Candy bar popcorn is a delicious and easy-to-make snack that is perfect for parties, movie nights, or anytime you need a sweet treat. With just a few simple ingredients, you can create a delicious popcorn that is sure to be a hit with everyone. So next time you're looking for a fun and festive snack, give candy bar popcorn a try.
