1/2 cup packed brown sugar
1/2 cup oatmeal, uncooked
1 teaspoon cinnamon
1/3 cup butter
2 (17 ounce) cans yams, drained
2 cups cranberries, raw
1 1/2 cups miniature marshmallows

Steps:

  • Combine flour, sugar, oats and cinnamon.
  • Cut in butter until mixture resembles coarse crumbs.
  • Lightly toss 1 cup crumb mixture with yams and cranberries.
  • Arrange in a 1 1/2 quart casserole.
  • Sprinkle with remaining crumb mixture.
  • Bake at 350 degrees for 35 minutes.

Choose long, skinny yams.

6 yams
1 cup brown sugar
1/4 cup butter
1/4 cup apple juice or 1/4 cup cranberry juice
1/2 teaspoon salt
1/4 teaspoon ground cinnamon
1 pinch ground cloves
1 pinch ground nutmeg
1 -2 large tart apple
6 ounces fresh cranberries, washed
1 cup pecans or 1 cup walnuts

Steps:

  • Preheat oven to 350 degrees.
  • Scrub the yams with a vegetable brush and boil them in their jackets uncovered for 30 minutes (or fork tender). Drain, peel, and cut in 2" thick rounds.
  • In a pot boil sugar, butter, water, salt, cinnamon, cloves and nutmeg 5 minutes.
  • Arrange yams in a 9x13 pan. Add peeled, cored, sliced apples. Tuck in the nuts and fresh cranberries amongst the yams and apples. Pour syrup over the top. Cover and bake at 350 degrees for 30 minutes.

Grandma was always in charge of Thanksgiving dinner in my family. This is my variation on her candied yams (sweet potatoes), and they are the best!

4 large sweet potatoes, peeled and cut into 1/4-inch-thick rounds
8 tablespoons (1 stick) salted butter
2 cups granulated sugar
One 20-ounce can crushed pineapple
1 teaspoon ground cinnamon
1 teaspoon ground cloves
Pinch kosher salt
1 teaspoon pure vanilla extract

Steps:

  • Preheat the oven to 375 degrees F. Place the sweet potatoes in a 2-quart baking dish. Set aside.
  • In a medium pot, melt the butter over medium-low heat. Add the sugar and stir until smooth. Drain the pineapple in a strainer, reserving the juice. Stir in about half the pineapple and half the pineapple juice; reserve the rest of the pineapple and juice for another use. Stir in the cinnamon, cloves and salt. Bring the mixture to a boil, remove from the heat and add the vanilla extract. Pour the mixture directly over the sweet potatoes.
  • Cover the dish with aluminum foil and bake until the sweet potatoes are just tender, about 45 minutes. Remove the foil and continue to bake until the sweet potatoes are caramelized, 20 to 25 minutes more.

2 cans natural style peaches, drained, 16 oz. each, such as s&w
1 can whole berry cranberry sauce, such as s&w, 16 oz
2/3 cup shelled walnuts, coarsely chopped
parsley sprigs, optional

Steps:

  • 1. In a large bowl, mix the candied yams and the peaches. Blend the cranberry sauce with the reserved syrup, from yams. Drizzle over yams and peaches. Add nuts; gently toss ingredients to mix well.
  • 2. Spoon mixture evenly into a 9 x 13 inch baking dish. Bake uncovered at 350 for 25 to 30 minutes or microwave uncovered on high for 10 to 15 minutes or til hot and bubbly. Garnish with parsley sprigs as desired. Serves 8
