Time 22m

Yield 120 cookies, 30-40 serving(s)

Number Of Ingredients 9

1 cup butter
1 cup powdered sugar
1 whole egg
1/4 teaspoon salt
2 1/2 cups all-purpose flour
1/4 teaspoon cream of tartar
1/2 cup pecans, chopped
1/2 cup candied pineapple, diced
1 cup candied red cherries or 1 cup green cherries (or mixture of both)

Steps:

  • Cream butter and sugar together.
  • Beat in eggs.
  • Stir in dry ingredients.
  • Stir in pecans and fruit.
  • Form into rolls 1 1/2 inches in diameter.
  • Wrap in plastic wrap; place in resealable plastic bag.
  • Freeze.
  • TO BAKE: Preheat oven to 375 degrees.
  • Using wet sharp knife, slice into thin slices (1/4 inch thick), and place on greased baking sheet.
  • Bake 6-8 minutes.

Tips:

  • Use fresh fruit. Fresh fruit has a brighter flavor and a more tender texture than fruit that has been frozen or canned.
  • Choose firm fruit. Fruit that is too ripe will fall apart during the candying process.
  • Cut the fruit into small pieces. This will help the fruit to candy evenly.
  • Use a heavy-bottomed saucepan. This will help to prevent the sugar syrup from burning.
  • Bring the sugar syrup to a boil over medium heat. Do not stir the syrup while it is boiling.
  • Reduce the heat to low and add the fruit. Simmer the fruit in the syrup for 30 minutes, or until the fruit is translucent.
  • Remove the fruit from the syrup and let it cool on a wire rack.
  • Roll the fruit in sugar. This will help to prevent the fruit from sticking together.
  • Store the candied fruit in an airtight container at room temperature.

Conclusion:

Candied fruit is a delicious and versatile treat that can be enjoyed on its own or used to decorate cakes, cookies, and other desserts. It is also a great way to preserve fruit. With a little patience, you can easily make your own candied fruit at home. Just follow the tips above and you will be sure to end up with delicious and beautiful candied fruit.
