CAMPFIRE HAMBURGER AND BEANS
Although I did make this "car camping", when my sons were young, it is a quick and easy, at home, top of the stove, one skillet dish. Sometimes, I use bacon, sometimes not. You might want to use less catsup, sugar, and molasses if you want it less sweet.

Steps:
- Rinse the beans under cold water, sorting out any rocks or particles. Place the beans in a stockpot with the ham hock and cover with water by 2 inches. Bring to a boil, and then reduce to a simmer. Cover the pot and simmer for 2 hours, checking occasionally to make sure the water level is fine. Add more water as needed.
- Throw in the garlic, red bell peppers and onions. Cover and continue cooking for another hour or two, remembering to check the water level.
- Add the chili powder, black pepper, and salt (or more to taste). Then cover and cook until the beans are lovely and tender, another 20 to 30 minutes. The liquid should be very thick and stew-like, not thin like a soup.
- Serve with cornbread as a meal, or spoon on top of nachos, tacos, etc.

Tips:
- Choose the right type of beans. The best beans for campfire cooking are small, dry beans such as pinto beans, black beans, or navy beans. Avoid using large, starchy beans like kidney beans or lima beans, as they take longer to cook and may not fully soften over a campfire.
- Soak your beans overnight. This will help to reduce the cooking time and make the beans more tender. If you don't have time to soak your beans overnight, you can quick-soak them by boiling them for 1 minute, then removing them from the heat and letting them sit for 1 hour.
- Use a large pot or Dutch oven. You'll need a pot that's big enough to hold all of your ingredients and allow for some room for expansion as the beans cook.
- Season your beans well. Beans can be bland on their own, so be sure to season them generously with salt, pepper, and other spices. You can also add vegetables, meat, or other ingredients to your beans for extra flavor.
- Cook your beans over low heat. Beans take a long time to cook, so be patient. Cook them over low heat for at least 2 hours, or until they are tender. You can speed up the cooking time by adding a pressure cooker lid to your pot.
Conclusion:
Campfire beans are a delicious and easy way to enjoy a meal in the great outdoors. With a little planning and preparation, you can easily make a pot of beans that will be enjoyed by everyone. So next time you're planning a camping trip, be sure to add campfire beans to your menu.
