Categories     Cajun

Time 20m

Yield 2 cups

Number Of Ingredients 9

1/2 cup dry-packed sun-dried tomato
1 (8 ounce) package reduced-fat cream cheese
1/2 cup nonfat plain yogurt
1/4 cup chili sauce
1/4 cup chopped green pepper
1/4 cup chopped green onion
1 garlic clove, minced
1/2 teaspoon celery seed
1/8 teaspoon ground red pepper (cayenne)

Steps:

  • In small bowl, pour 1 cup boiling water over tomatoes.
  • let stand at room temperature 5-10 minutes.
  • Drain and chop tomatoes.
  • meanwhile, in another small bowl, combine cream cheese, yogurt and chili sauce.
  • mix well.
  • Add tomatoes and all remaining ingredients; mix well.
  • refrigerate till serving time.
  • Just before serving; stir dip.
  • serve with cut up fresh veggies or garlic flavored bagel crisps.

Tips:

  • Use fresh spinach. Fresh spinach has a more vibrant flavor and color than frozen spinach.
  • Chop the spinach finely. This will help it to evenly distribute throughout the dip.
  • Use a good quality cream cheese. A cheap cream cheese will not have as rich a flavor and will make the dip less creamy.
  • Use a variety of cheeses. This will give the dip a more complex flavor. Some good options include cheddar cheese, Parmesan cheese, and Monterey Jack cheese.
  • Don't overcook the dip. The dip should be heated through, but it should not be boiling. Overcooked dip will be tough and rubbery.
  • Serve the dip with a variety of dippers. Some good options include tortilla chips, crackers, and vegetables.

Conclusion:

This Cajun spinach dip is a delicious and easy-to-make appetizer that is perfect for any occasion. It is creamy, cheesy, and packed with flavor. The best part is that it can be made ahead of time, so you can relax and enjoy your party without having to worry about cooking.
