CAJUN-SPICED POPCORN

This recipe came from Alan (my best friend in college). His parents are from Louisiana and this was his mom's recipe. We used to have poker parties all the time and this was one of our favorite things to serve. Popcorn is cheap, so we made a lot of different flavored popcorns.

Time 15m

Yield 3 quarts

Number Of Ingredients 8

3 quarts popped popcorn
1/4 cup butter, melted
1 teaspoon chili powder
1/2 teaspoon onion powder
1/2 teaspoon garlic powder
1/4 teaspoon cayenne pepper
1/4 teaspoon salt
1/8 teaspoon lemon pepper

Steps:

  • In small bowl, place 1 quart hot popped corn; set aside.
  • In large bowl, pour butter over remaining popcorn.
  • Combine remaining ingredients. Sprinkle over buttered popped corn, tossing gently to coat.
  • Spread on 15x10-inch baking; sheet and bake at 300°F for 3 minutes, or until desired crispness.
  • Mix in reserved popcorn. Serve immediately or store in airtight container.

Tips for Perfect Cajun Spiced Popcorn:

  • Use fresh popcorn kernels: Fresh kernels will pop better and have a better flavor than old kernels.
  • Measure your popcorn kernels accurately: Using too many or too few kernels can result in unpopped kernels or burnt popcorn.
  • Use a large pot or Dutch oven: This will give the popcorn plenty of room to pop without overcrowding.
  • Heat the oil over medium-high heat: This will help the popcorn pop quickly and evenly.
  • Add the popcorn kernels and shake the pot or Dutch oven: This will help to coat the kernels in oil and prevent them from sticking to the bottom of the pot.
  • Cover the pot or Dutch oven and listen for the popping sounds: Once the popcorn starts popping, reduce the heat to medium-low and continue to shake the pot or Dutch oven.
  • Remove the pot or Dutch oven from the heat when the popping sounds slow down: This will prevent the popcorn from burning.
  • Season the popcorn with Cajun spice mix: In a small bowl, combine the Cajun seasoning ingredients (paprika, garlic powder, onion powder, cayenne pepper, black pepper, salt) and sprinkle over the popcorn.
  • Serve immediately: Cajun spiced popcorn is best enjoyed fresh and warm.

Conclusion:
