CAJUN SPICED BURGERS

Beef burgers get a big flavor boost here from Cajun seasoning, while the classic trinity of Creole cuisine (onions, bell peppers, and celery) makes an appearance as well. Our burger blend of choice is 80% lean ground beef-it has the perfect ratio of juiciness to flavor.

Time 30m

Yield 4 servings

Number Of Ingredients 12

1 1/2 pounds 80% lean ground beef
2 teaspoons Cajun seasoning
3 scallions, sliced (white and green parts)
1/2 cup mayonnaise
2 teaspoons Dijon mustard
1 teaspoon hot sauce
1/4 cup loosely packed fresh flat-leaf parsley leaves, chopped
1 celery stalk, finely chopped (about 1/2 cup)
1 medium yellow onion, sliced into 1/4-inch rounds
1 medium green bell pepper, sliced into 1/4-inch rings
1 tablespoon vegetable oil
4 sesame seed hamburger buns, split

Steps:

  • SET UP: Prepare a grill or grill pan and heat to medium-high heat.
  • FORM THE PATTIES: Gently mix the ground beef, Cajun seasoning, and scallions. Form into four 1/2-inch-thick patties.
  • MIX THE REMOULADE: Combine the mayonnaise, mustard, hot sauce, parsley, and celery in a small bowl. Refrigerate until needed.
  • GRILL EVERYTHING: Grill the patties, flipping once, to desired doneness, about 4 minutes per side for medium. Brush the onion and green pepper with the oil and grill the vegetables until lightly charred and tender, about 5 minutes total.
  • SERVE: Toast the buns on the grill for a minute or so. Put a patty on the bottom bun and top with remoulade. Add some onion and bell pepper, then add the top bun.

Time 40m

Yield 4 servings

Number Of Ingredients 12

1 1/2 pounds 80 percent lean ground beef
2 teaspoons Cajun seasoning
3 scallions, sliced (white and green parts)
1/2 cup mayonnaise
2 teaspoons Dijon mustard
1 teaspoon hot sauce
1/4 cup loosely packed fresh flat-leaf parsley leaves, chopped
1 celery stalk, finely chopped (about 1/2 cup)
1 medium yellow onion, sliced into 1/4-inch-thick rounds
1 medium green bell pepper, sliced into 1/4-inch-thick rings
1 tablespoon vegetable oil
4 sesame seed hamburger buns, split

Steps:

  • For the Cajun-spice patties: Prepare a grill or grill pan, and heat to medium-high heat.
  • Gently mix the ground beef, Cajun seasoning, and scallions, and then divide the mixture into four 1/2-inch-thick patties.
  • For the remoulade: Combine the mayonnaise, mustard, hot sauce, parsley, and celery in a small bowl. Refrigerate until needed.
  • Grill the patties, flipping once, to desired doneness, about 4 minutes per side for medium. Brush the onion and green pepper with the oil, and grill the vegetables until lightly charred and tender, about 5 minutes total.
  • Toast the buns on the grill for a minute or so. Spread both the top and bottom buns with the remoulade. Put a patty on the bottom bun, add some onion and bell pepper, then add the top bun.

Tips:

  • Choose high-quality ground beef. Look for grass-fed or organic beef with a fat content of at least 20%. This will ensure that your burgers are juicy and flavorful.
  • Don't overwork the meat. When you mix the ingredients together, do so gently and quickly. Overworking the meat will make the burgers tough.
  • Season the meat liberally. Cajun seasoning is a great way to add flavor to your burgers. You can also add other spices, such as garlic powder, onion powder, and paprika.
  • Form the burgers gently. Use your hands to gently form the meat into patties. Do not press down on the burgers, as this will make them dense.
  • Cook the burgers over medium heat. This will help to prevent them from drying out.
  • Use a meat thermometer to check the burgers for doneness. The burgers are done when they reach an internal temperature of 160 degrees Fahrenheit.
  • Let the burgers rest before serving. This will help the juices to redistribute throughout the meat, making them more tender and flavorful.

Conclusion:

Cajun-spiced burgers are a delicious and easy-to-make meal that are perfect for any occasion. By following these tips, you can make sure that your burgers are juicy, flavorful, and cooked to perfection.
