6 tablespoons unsalted butter, cut into pieces
3 cups frozen corn kernels
3 cloves garlic, minced
6 scallions, thinly sliced
Freshly ground pepper
1 cup canned diced fire-roasted tomatoes with green chiles

CAJUN CORN SOUP

Cajun Corn Soup image

I got this recipe from a friend of mine who is a caterer. It's always a big hit. I like to add some Cajun seasonings. Posted for ZWT5.

Provided by TxGriffLover

Categories     Corn

Time 1h15m

Yield 8 serving(s)

Number Of Ingredients 15

1 cup white onion, chopped
1 (6 ounce) can tomato paste
1 cup green pepper, chopped
2 (16 ounce) packages frozen whole kernel corn
6 green onions, sliced
1/2 cup vegetable oil
3 cups cooked ham, cubed
1/2 cup all-purpose flour
1 1/2 lbs fully cooked smoked sausage, sliced
3 cups water (or stock)
1 (14 ounce) can cajun-style stewed tomatoes
1/4 teaspoon cayenne pepper
1 teaspoon salt
2 cups fresh tomatoes, peeled and chopped
2 teaspoons hot pepper sauce (like Frank's)

Steps:

  • In a large kettle saute onion, green pepper and green onions in oil for 5 minutes. Add flour and cook until bubbly. Add water (or stock), stewed tomatoes, chopped tomatoes and tomato paste and mix well.
  • Stir in corn, ham, sausage, cayenne pepper, salt and hot sauce. Bring to a boil, stirring frequently.
  • Reduce heat, then simmer uncovered for 1 hour, stirring occasionally.

Tips:

  • Use fresh, high-quality ingredients. This will make a big difference in the flavor of your soup.
  • Don't be afraid to adjust the spices to your taste. This recipe is a good starting point, but you can add more or less cayenne pepper, paprika, and cumin depending on how spicy you like your soup.
  • If you don't have shrimp, you can use another type of seafood, such as crab, lobster, or scallops.
  • Serve the soup with a side of crusty bread or cornbread. This will help to soak up all of the delicious broth. Don't overcrowd the pan - if adding chicken, shrimp and vegetables all at once, cook in batches so the temperature of the oil doesn't drop.
  • To make the soup ahead of time, cook the soup according to the recipe and then let it cool completely. Store the soup in an airtight container in the refrigerator for up to 3 days. When you're ready to serve, reheat the soup over medium heat until it's warmed through.

Conclusion:

This Cajun corn soup with shrimp is a delicious and easy-to-make soup that's perfect for a cold day. The soup is flavorful and satisfying, and it's packed with healthy ingredients like corn, shrimp, and vegetables. If you're looking for a new soup recipe to try, this one is definitely worth a shot.
