⅓ cup all-purpose flour
¼ cup vegetable oil
2 onions, thinly sliced
2 cups milk

Steps:

  • Season pork chops with Cajun seasoning and coat completely with flour, reserving any leftover flour.

  • On a flat surface, use a sharp knife to make a pocket inside each of the pork chops. In a mixing bowl, combine the ground pork, salt, cayenne, granulated garlic, black pepper, paprika, and green onions; mix well. Divide the pork mixture into 4 equal amounts and overstuff the mixture into the pocket of each pork chop. Mix all the rub ingredients together in a small bowl. Season each pork chop with the rub. Cover and refrigerate overnight to let the seasoning infuse into the chops. Preheat a grill or BBQ pit to 375 degrees F. Put the stuffed chops on the grill or BBQ pit. After 30 minutes, turn the pork chops over. After an additional 15 minutes, turn each pork chop over and begin basting each side with BBQ sauce. Grill until a pretty glaze forms and the internal temperature registers 170 degrees F on an instant-read thermometer. 4 bone in, pork loin chops, 1/2" thick
1 onion, yellow, medium
16 oz frozen, baby lima beans, thawed
1-2 Tbsp olive oil
salt and pepper
3 c hot water
1 Tbsp all purpose flour, dissolved in 1/4 c. cool water
4 servings, cooked rice

Steps:

  • 1. Cut a slight slit on the curved sides of the pork chops, for them not to curl up while browning them.Season the pork chops on both sides with salt and pepper. Add olive oil, just to cover the bottom of a large skillet. Heat oil on high, fit the four pork chops flat in the skillet. Brown the chops on both sides, as much as you can, on high heat, but not burnt. Transfer the chops from the skillet and place them in the bottom of the crock-pot.
  • 2. Add the chopped onions to the skillet and sauté until softened, about a minute. Add 2 cups of hot water to the skillet and the baby lima beans. Stir to scrap up all the tasty bits, from the browned pork chops. Transfer ingredients from the skillet to the crock-pot, on top of the pork chops. DO NOT stir. Cover and DO NOT uncover, unless to add more hot water to cover the top of the beans.
  • 3. Cook on high for 2 hours. Check the beans by taste, to see if they are tender and the pork chops at the bottom should be tender, also. Don't let the water get below your beans.
  • 4. Measure one tablespoon of flour, add the 1/4 cup of cool water. Stir to dissolve, without lumps. Add slowly to the crock-pot and stir gently, to thicken for a sauce texture. Taste sauce for seasoning and add some Tony Cachere's seasoning or whatever seasoning to your taste (celery salt).
  • 5. Serve over, a serving of cooked rice.

3 tablespoons olive oil
1 small green bell pepper, cut into thin 1-inch strips
4 scallions, cut into 1/2-inch-long pieces, white and green parts separated
2 stalks celery, thinly sliced
2 ounces Canadian bacon, cut into 1/2-inch pieces
2 cloves garlic, thinly sliced
1 1/2 teaspoons Cajun seasoning
1 cup cherry tomatoes, halved
1/2 cup roughly chopped parsley

4 bone-in pork chops, each about 3/4-inch-thick and 8 ounces
Lemon wedges and Louisiana-style hot sauce for serving, optional

  • Combine the spelt with 1 1/2 cups of water in a medium saucepan. Bring to a boil, reduce heat to medium low, cover and simmer until most of the water is absorbed and the grains are tender but still chewy, about 30 minutes.   • Sprinkle the pork chops all over with the remaining 1 teaspoon Cajun seasoning and 1 teaspoon salt. Heat the remaining 1 tablespoon oil in the empty skillet over medium-high heat. Nestle the pork chops in the skillet snuggly. Cook until nicely browned on both sides and an instant-read thermometer inserted into the center of each registers 140 degrees F, about 4 minutes per side.

Not quite as wonderful as this one, but great when you are in a hurry and a bit healthier as it's not breaded and fried.

4 pork chops (1/2 inch thick)
1/3 cup flour
vegetable oil (for frying)
1 teaspoon salt
1/4 teaspoon onion powder
1/4 teaspoon garlic powder
1/8 teaspoon white pepper
1/8 teaspoon dry mustard
1/8 teaspoon rubbed sage
1/8 teaspoon cayenne pepper (more if you're a heat freak)
1/8 teaspoon ground cumin
1/8 teaspoon thyme
4 tablespoons butter
1 teaspoon minced garlic
1 teaspoon Tabasco sauce

Steps:

  • Combine all the seasoning ingredients in a small bowl.
  • Sprinkle the chops with some of the seasoning mix, patting in on with your hands (use about 2/3 of the mixture).
  • Add the remaining seasoning mix to the flour and place on a flat plate.
  • Heat 1/4 inch oil in a large skillet over medium-high heat until hot, about 2 minutes.
  • Just before frying, dredge each chop in the seasoned flour mixture, shaking off excess.
  • Fry in hot oil until dark golden brown and cooked through, about 4 to 5 minutes per side.
  • Drain on paper towels.
  • In a very small pan, heat the butter over high heat until half melted, shaking the pan almost constantly.
  • Add the garlic and continue to cook until the butter is melted and the foam on the surface is barely browned, about 2 to 3 minutes, shaking the pan frequently. Be careful not to burn the butter.
  • Add the Tabasco and continue to cook until the sauce is lightly browned and very foamy, about 1 to 2 minutes.

  • Preheat oven to 350. Cook sausage in large skillet on medium heat 5-6 min until crumbles and no longer pink, remove, drain. Saute onion, celery, bell pepper and garlic in hot drippings til tender, remove from heat, stir in sausage and 1 tsp cajun seasoning. Stir together sausage mixture, bread cubes and chicken broth in large bowl. Cut lengthwise slit in one side of each pork chop to form a pocket, cut to but not through opposite side. Sprinkle both sides and pocket of each chop with salt and pepper. Spoon sausage mix into each pocket. Stir together paprika, pepper and remaining 2 ts cajun seasoning, rub over chops. 4 (1/4 lb) pork loin chop with bone, 1/2 inch thick about 1 lb, trimmed of fat
2 teaspoons Mrs Dash's extra spicy seasoning
2 teaspoons vegetable oil
1/2 medium onion, sliced
1 (14 1/2 ounce) can zesty diced tomatoes with jalapeno peppers, undrained

Steps:

  • Sprinkle both sides of pork chops with seasoning blend. In 12-inch nonstick skllet, heat oil over medium-high heat. Add onion; cook about 2 minutes, stirring occasionally, until slightly tender. Push onion to one side of skillet.
  • Add pork to other side of skillet. Cook about 3 minutes, turning once, until browned. Add tomatoes. Heat to boiling; reduce heat. Cover and cook 4 to 8 minutes or until pork is no longer pink in center.

I developed this recipe to use with my Cameron Stove-Top Smoker. It's QET -- Quick, Easy, Tasty and HEALTHY! You can use just about any combination of vegetables. 4 thick center-cut pork chops (trimmed)
4 medium peeled and quartered potatoes
4 peeled carrots, quartered
1 medium onion, cut in wedges
1 elephant garlic clove (optional)
1/4 lemons or 1/4 lime juice
2 tablespoons olive oil
2 tablespoons cajun spices
2 tablespoons chopped garlic
3 tablespoons mesquite smoker wood chips

Steps:

  • Combine marinade ingredients in a Ziploc bag.
  • Add pork chops and marinade in refrigerator for at least one hour.
  • To bottom of smoker add 3 tablespoons mesquite wood chips.
  • Line tray of smoker with aluminum foil (makes cleanup a breeze).
  • Arrange potatoes, onions, carrots and pork chops in tray.
  • Brush everything with marinade or spray with Pam.
  • Close lid and place on grill or stove-top.
  • Smoke over medium heat for 30 minutes.
  • Check for doneness before serving.

4 center cut pork chops, 1/2 inch thick
1/2 Tbsp cajun seasoning
1 tsp black pepper
1 tsp garlic powder
1 tsp onion powder
1 tsp paprika
1 tsp chili powder
1 tsp dried parsley
2 Tbsp vegetable oil
1/2 c barbecue sauce

Steps:

  • 1. Mix all seasoning ingredients together and set aside.
  • 2. Pat dry pork chops and brush both sides with vegetable oil. Sprinkle seasoning (to your taste) onto both sides of the pork chops and rub well into both sides.
  • 3. Refrigerate pork chops for several hours or overnight. Allow chops to sit for awhile before grilling them.
  • 4. Heat grill to medium low heat. Grill chops 4-6 minutes per side or until done. Brush on barbecue sauce just before removing from grill. (Chops can be baked in the oven as well)
