CHICKEN FETTUCCINE, CAJUN STYLE
This recipe came out of the Oregonian from Portland, Oregon by Hall Street Bar & Grill in Beaverton. When I made this I left out the cayenne pepper in both places. It was too spicy for me.

Tips:
- Use high-quality ingredients: Fresh, flavorful ingredients will make all the difference in your Cajun chicken fettuccine. Look for plump, juicy chicken breasts or thighs, and use a good-quality olive oil or butter for cooking.
- Don't be afraid to adjust the seasonings: The amount of Cajun seasoning you use is a matter of personal preference. If you like things spicy, add more seasoning. If you prefer a milder dish, use less.
- Cook the chicken until it is cooked through: Chicken is safe to eat when it reaches an internal temperature of 165 degrees Fahrenheit. Use a meat thermometer to ensure that your chicken is cooked properly.
- Reserve some of the pasta water: The starchy pasta water can be used to create a creamy sauce. Reserve about 1/2 cup of pasta water before draining the pasta.
- Add the vegetables and sauce to the pasta: Once the pasta is cooked, add the vegetables and sauce to the pot. Stir until the vegetables are heated through and the sauce is evenly distributed.
- Serve immediately: Cajun chicken fettuccine is best served immediately. Garnish with chopped parsley or green onions for an extra touch of flavor.
