Steps:
- Bring a large pot of salted water to a boil.
- Place a large saute pan over medium-high heat. When the pan is hot, add a film of oil along with the onions and a pinch of salt. Cook, stirring occasionally, until the onions begin to soften and caramelize, 2 to 3 minutes. Move the onions to one side of the pan, and then add the butter, cabbage and a pinch of salt. Cook until everything is caramelized and softened, 4 to 5 minutes. Add the chicken stock. Simmer this mixture until the cabbage is cooked through and the liquid has reduced, about 5 minutes.
- In the meantime, drop your pasta. Cook at a gentle boil for 2 minutes less than the package directions. Then drain and add to the cabbage mixture. Gently fold in the parsley and sour cream and serve immediately, adding black pepper and a drizzle of oil.

MY CABBAGE AND NOODLES
My version of a well loved combination. Caramelising the sugar gives it the special something. The flavoring with vinegar, butter and caraway is typically German. The flavor of egg noodles is essential for this dish I think, so best don't use pasta.

Tips:
- Use a variety of vegetables: Don't limit yourself to just cabbage and noodles. Add other vegetables like carrots, celery, onions, or bell peppers to make the dish more colorful and nutritious.
- Use a healthy cooking method: Instead of frying the noodles, try boiling or steaming them. This will reduce the amount of oil and calories in the dish.
- Use a low-sodium soy sauce or tamari: Soy sauce can be high in sodium, so use a low-sodium version or tamari instead. This will help keep the dish healthy and flavorful.
- Add some lean protein: To make the dish more filling and satisfying, add some lean protein like chicken, shrimp, or tofu.
- Serve with a side of healthy grains or legumes: Cabbage and noodles can be served with a side of healthy grains like brown rice or quinoa, or legumes like lentils or beans. This will help make the meal more balanced and nutritious.
