EDNA LEWIS'S CORN PUDDING

Edna Lewis's Corn Pudding image

This buttery, fluffy dish comes from Edna Lewis, the African-American chef and cookbook author credited with preserving countless recipes from the old South. It serves as not only a seasonal bridge - a farewell to summer, with winter chill waiting in the wings - but also as a sweetly welcome blurring of the lines between a side dish and a dessert.

Provided by The New York Times

Categories     dinner, lunch, custards and puddings, side dish

Time 1h

Yield 6 to 8 servings

Number Of Ingredients 7

3 tablespoons/42 grams butter, melted, plus more for dish
2 cups/350 grams corn (from about 3 ears)
1/3 cup/67 grams sugar
1 teaspoon/5 grams salt
2 large eggs, beaten
2 cups/480 milliliters whole milk
1/2 teaspoon/1 gram freshly grated nutmeg

Steps:

  • Heat oven to 350 degrees and butter a 1 1/2-quart baking dish. Cut the corn from the cob into a mixing bowl by slicing from the top of the ear downward. Don't go too close to the cob; cut only half the kernel, then scrape off the rest with the back of the knife.
  • Stir sugar and salt into corn. Mix beaten eggs and milk together, then stir into corn mixture. Add melted butter and mix thoroughly.
  • Spoon mixture into prepared dish and sprinkle with nutmeg. Place the dish in a larger baking dish or roasting pan. Transfer to oven and carefully pour hot water into the larger dish until it comes about halfway up the sides of the smaller baking dish.
  • Bake for 40 to 50 minutes, or until a knife inserted into the center of the pudding comes out clean. The pudding will be set but still jiggle.

3 teaspoons fresh thyme leaf, finely chopped
1 bag frozen corn kernels
1 cup yellow cornmeal
½ cup all purpose flour
½ teaspoon baking powder
1 tablespoon sugar
2 teaspoons kosher salt, plus more to taste
1 teaspoon freshly ground black pepper
5 large eggs
1 ½ cups milk
½ cup heavy cream
¾ cup sour cream
1 ½ cups Murray's parmigiano reggiano cheese, divided
hot water, for baking
fresh parsley, for garnish

BUTTERY CORN PUDDIN'

Buttery Corn Puddin' image

Make and share this Buttery Corn Puddin' recipe from Food.com.

Provided by Darlene Summers

Categories     Corn

Time 55m

Yield 8 serving(s)

Number Of Ingredients 8

1 (17 ounce) can creamed corn
1/4 cup all-purpose flour
1/4 cup sugar
3/4 cup milk
3 eggs
1/4 cup melted butter (may use margarine, butter is better)
salt
2 teaspoons butter or 2 teaspoons margarine, softened

Steps:

  • Combine corn, flour, sugar, milk, eggs & 1/4 cup of butter in bowl.
  • Mix thoroughly.
  • Pour into 1 1/2 quart casserole greased with remaining 2 teaspoons of butter.
  • Bake at 375° for 45 minutes or till set.

Tips:

  • Use fresh corn. Fresh corn has a sweeter flavor and a more tender texture than frozen or canned corn.
  • Don't overcook the corn. Overcooked corn will be tough and chewy. Cook the corn just until it is tender, about 5-7 minutes.
  • Use a well-seasoned cast iron skillet. A well-seasoned cast iron skillet will help to create a crispy crust on the corn pudding.
  • Don't stir the corn pudding too much. Over-stirring will make the corn pudding dense and gummy. Stir the corn pudding just enough to combine the ingredients.
  • Serve the corn pudding hot. Corn pudding is best served hot out of the oven. You can also reheat it in the microwave or in a 350-degree Fahrenheit oven.

Conclusion:

Buttery corn pudding is a delicious and easy-to-make side dish that is perfect for any occasion. It is made with fresh corn, eggs, milk, butter, and a few simple seasonings. Corn pudding can be served hot or cold, and it is a great way to use up leftover corn. So next time you have some fresh corn on hand, give this recipe a try!
