1 tablespoon olive oil
1 medium onion, chopped
2 cloves garlic, minced
3 cups diced peeled butternut squash (1/2-inch dice)
4 cups vegetable broth
1 cup orzo pasta (rice-shaped pasta)
1/2 cup freshly grated parmesan cheese
2 tablespoons chopped fresh basil
salt and pepper

Steps:

  • In a deep skillet, melt butter with oil over medium-high heat.
  • Add onion and cook for about 6 minutes, or until tender and starting to brown.
  • Add garlic and cook for 30 seconds.

4 bacon strips, chopped

1 teaspoon garlic salt

4 tablespoons olive oil
3 shallots, finely diced
2 garlic cloves, minced
3 cups cremini mushrooms, sliced
3 cups chicken stock
1 cup orzo pasta
1 cup butternut squash, diced
2 sprigs fresh rosemary
salt and pepper

Steps:

  • Preheat oven to 375 degrees.
  • Place a skillet over high heat and add oil.
  • Saute onion for 3 to 4 minutes.
  • Add mushrooms and garlic and continue to saute until mushrooms have released their liquid and they are golden.
  • Add chicken stock and bring to boil.
  • Pour mushroom and stock mixture orzo and rosemary into a 8x8 baking dish.
  • Season with salt and pepper and bake 35 minutes until liquid is absorbed.

1 small butternut squash
3 garlic cloves
2 tablespoons butter
1 cup orzo pasta
3 1/2 cups chicken broth
2 ounces parmesan cheese
3 tablespoons fresh chives, minced
1 lemon
4 ounces Baby Spinach
1/4 teaspoon nutmeg
4 bone in chicken breast halves

Steps:

  • Peel and seed squash, then cut into 1/2 inch pieces. Mince garlic.
  • Using meat pounder, pound thick part of chicken breast to 3/4 to 1 inch thickness. Season chicken with salt and pepper.
  • Place chicken, skin side down, in cold 12 inch skillet, Cover and place over medium heat. Cook, without moving , unitl skin is golden brown, about 15 minutes. Continue to cook, covered, until skin is deep golden brown, rotating skillet halfway through cooking. Transfer to platter, tent with foil.
  • While chicken cooks, melt butter in large sauce pan over medium heat. Add garlic and cook until fragrant, about thirty seconds. Stir in orzo and cook for one minute. Add squash and broth, bring to boil, and cook, stirring often, until orzo and squash are both tender, about 15 minutes.
  • While orzo is cooking grate parmesan (1 cup) mince three tablespoons chives and squeeze 1 teaspoon lemon juice.
  • Off heat stir in babay spinach, nutmeg, parmesan, 2 tablespponsschives and lemon juice. Let sit unccovered for 5 minutes to thicken. Sprinkle renaining chives over chicken.

.5 lb butternut squash, seeded and peeled
Kosher salt and freshly ground pepper
2 Tbs extra-virgin olive oil
2 Tbs honey
2 Tbs balsamic vinegar
1 cup orzo
1 cup brown chicken stock

Steps:

  • Cut the squash into 3 or 4 evenly sized pieces. Season with salt and pepper, drizzle with the olive oil, and wrap in foil. Roast in the oven for 30 to 45 minutes, or until very soft. Remove from the oven and allow to cool for 5 minutes, then place the cooked squash in the bowl of a food processor. Add the honey, balsamic vinegar, and salt and pepper and pulse to form a relatively smooth puree. Set aside. Bring 3 quarts of water to a boil and add 2 Tbs of salt. Set up an ice bath nearby. Cook the orzo and plunge it into the ice bath. Once cooked, drain it and lay it out on a baking sheet to dry. Bring the chicken stock to a boil in a 12 inch saute pan. Add the orzo and squash puree and cook over high heat, stirring frequently, until the chicken stock is fully absorbed by the orzo. Season with salt and pepper and serve.
