Similar to pumpkin muffins, these are a great way to use up butternut squash and are not too high in sugar. Even my picky husband enjoys these! Feel free to play around with the spice amounts to your liking.

SPICED SQUASH MUFFINS
When I created these moist muffins with our garden-fresh squash, my 3 year-old son kept asking for more. That batch disappeared quickly...and so did the second one! We especially like the topping of brown sugar and cinnamon, which adds a sweet crunch. -TaeRee Glover, Sedan, Kansas

Tips:
- Use ripe butternut squash: For the best flavor, choose a butternut squash that is firm and has a deep orange color.
- Roast the butternut squash: Roasting the butternut squash brings out its natural sweetness and intensifies its flavor.
- Use a food processor to puree the butternut squash: This will ensure that the squash is smooth and evenly incorporated into the muffin batter.
- Don't overmix the batter: Overmixing the batter can result in tough muffins. Mix the batter just until the ingredients are combined.
- Fold in the chocolate chips: Once the batter is mixed, gently fold in the chocolate chips. This will prevent the chocolate chips from sinking to the bottom of the muffins.
- Bake the muffins at a moderate temperature: Baking the muffins at a moderate temperature (350 degrees Fahrenheit) will help them to rise evenly and prevent them from becoming dry.
- Test the muffins for doneness: Insert a toothpick into the center of a muffin. If the toothpick comes out clean, the muffins are done.
- Let the muffins cool before serving: Allow the muffins to cool for a few minutes before serving. This will help them to set and make them easier to handle.
Conclusion:
Butternut squash chocolate chip muffins are a delicious and nutritious snack or breakfast food. They are easy to make and can be enjoyed by people of all ages. The combination of butternut squash, chocolate chips, and spices creates a unique and flavorful muffin that is sure to please everyone.
