Number Of Ingredients 9

1 large sweet or yellow onion (thickly sliced into 1/2-inch thick rings)
1 cup milk
1 Tbsp white vinegar
1/2 cup sour cream
1 cup all-purpose flour
1/2 Tbsp salt
1/4 tsp black pepper
1 tsp garlic powder
Oil for frying (I used canola oil - use something with a high smoke point)

Steps:

  • Heat a dutch oven over medium heat with 1" of oil (or enough to cover the onion rings). You can use a deep fryer if you have one.
  • In a medium bowl, whisk together 1 cup milk with 1 Tbsp vinegar and let sit 5 minutes. Whisk in 1/2 cup sour cream.
  • In a separate bowl, whisk together: 1 cup flour, 1/2 Tbsp salt, 1/4 tsp black pepper, and 1 tsp garlic powder.
  • Separate the onion rings and dip each ring in the milk mixture, then dredge with flour. (I used a fork to transfer from the wet bowl to the dry bowl so my hands didn't get as gunky). Repeat by dipping in milk mixture a second time and dredging again in flour. Place the finished onion rings on a plate until ready to fry.
  • Once the oil is at 375˚F on a thermometer, or hot enough for the onion rings to sizzle, place 3-4 double battered onion rings in a single layer in the hot oil and cook for about 3 minutes, flipping halfway and fry until exterior is crisp and light golden brown. Let onion rings cool on paper towels so soak up any excess oil.

BUTTERMILK ONION RINGS

Provided by Geoffrey Zakarian

Time 30m

Yield 6 servings

Number Of Ingredients 12

Vegetable oil, for deep-frying
1 cup all-purpose flour
1 cup rice flour
1 cup finely grated parmesan cheese, plus more for topping
3 tablespoons mustard powder
1 tablespoon paprika
1 teaspoon garlic powder
Kosher salt
2 cups buttermilk
1 cup dark beer, such as porter or stout
2 tablespoons dijon mustard
2 medium onions, peeled and cut into 1/3-inch-thick rings

Steps:

  • Fill a fryer or large Dutch oven with 2 inches vegetable oil; heat to 330 degrees F to 340 degrees F. Prepare the batter: Whisk the all-purpose flour, rice flour, parmesan, mustard powder, paprika, garlic powder and 2 tablespoons salt in a large bowl. Whisk the buttermilk, beer and dijon mustard in a separate large bowl. Add all but 1 cup of the wet ingredients to the dry ingredients and whisk to make a smooth batter, similar to a pancake batter.
  • Test 1 onion ring: Dip in the batter and fry until golden brown, about 2 minutes. If the batter is still not cooked through, then it is probably too thick; add a splash more of the wet ingredients to the batter. (You may also need to add more of the wet ingredients to the batter as it sits.)
  • Working in batches, dip the remaining onion rings in the batter and fry until golden brown, about 2 minutes. Remove with a slotted spoon and transfer to a rack. Immediately sprinkle with more parmesan.

Tips and Conclusion

  • Use fresh buttermilk: Fresh buttermilk will give your onion rings a lighter and fluffier texture.
  • Don't overmix the batter: Overmixing the batter will make your onion rings tough.
  • Use a large skillet or Dutch oven: You want to make sure that your onion rings have enough space to fry without overcrowding.
  • Heat the oil to the correct temperature: The ideal temperature for frying onion rings is 375 degrees Fahrenheit.
  • Fry the onion rings in batches: Don't overcrowd the skillet or Dutch oven with onion rings, or they will not cook evenly.
  • Drain the onion rings on paper towels: This will help to remove excess oil from the onion rings.
  • Serve the onion rings hot with your favorite dipping sauce: Buttermilk onion rings are best served hot with your favorite dipping sauce, such as grilled tomato aioli, ranch dressing, or barbecue sauce.

Conclusion

Buttermilk onion rings are a delicious and easy-to-make appetizer or side dish. By following these tips, you can make sure that your onion rings turn out perfect every time. So next time you're having a party or gathering, be sure to give buttermilk onion rings a try. Your guests will love them!
