MOM'S MEATLOAF
This is the only meatloaf I ever liked! Seasoned with fresh onion,a touch of bell pepper, and glazed with a sweet ketchup sauce. For our small family, we cook one loaf and freeze the other to cook at a later time.

- Use a muffin tin: If you don't have a loaf pan, you can bake the meatloaf in a muffin tin. Just divide the meatloaf mixture evenly among the muffin cups and bake according to the recipe.
- Add your favorite vegetables: Finely chopped carrots, celery, or onions can be added to the meatloaf mixture for extra flavor and nutrition.
- Make a glaze: Brush the meatloaf with a glaze made from ketchup, brown sugar, and mustard during the last 15 minutes of baking. This will give the meatloaf a shiny, caramelized crust.
