1 pound ground turkey (beef or chicken work too!)
1/2 medium yellow onion (finely diced)
1 teaspoon minced garlic
1 tablespoon olive oil
4.5 oz. can of green chilis
3 tablespoons tomato paste
15 oz. can pinto beans
1 tablespoon chili powder
1 teaspoon cumin
1/2 teaspoon paprika
1/2 tablespoon garlic powder
1/8 teaspoon salt (or more to taste)
1/2 cup nonfat Greek yogurt
2/3 cups shredded Mexican cheddar cheese (divided 1/3 and 1/3)

Steps:

  • Preheat oven to 400º and spray a 9x9-inch pan with cooking spray.
  • Place olive oil on a large frying pan and heat over medium/high heat. When the olive oil is fragrant, add onion and minced garlic and sauté until onions are translucent.
