LEMON SPONGE PUDDING

Lemon Sponge Pudding image

This makes a delicate sponge that separates in the oven so there's a layer of lemon pudding in the bottom of the bowl. We like raspberry sorbet on top for color and brightness, but my restaurant partner Rich Melman likes my Buttermilk Ice Cream on top for a creamier soothing experience.

As this bakes, a foamy cake layer will form on top, with an airy custardy pudding forming on the bottom. Adapted from an old issue of McCall's magazine. I haven't tried this one yet, but wanted to share it. Garnish with powdered sugar, a handful of fresh raspberries, and a few slices of orange if you like.

CHRISTMAS PUDDING WITH CITRUS & SPICE

Christmas pudding with citrus & spice image

A fruity pud, served with orange custard cream, makes the perfect end to the traditional Christmas meal

Provided by Sara Buenfeld

Time 6h30m

Number Of Ingredients 17

175g each raisin, currants and sultanas
140g whole glacé cherry
50g mixed peel
50g whole blanched almond
zest 1 orange and 1 lemon
1 medium carrot, peeled and finely grated
150ml brandy
50ml/2fl oz orange liqueur, such as Grand Marnier
175g light muscovado sugar
175g fresh white breadcrumb
125g self-raising flour
1 tsp mixed spice
¼ tsp grated nutmeg
175g butter, frozen
2 eggs, beaten
butter, for greasing
holly sprig, to decorate

Steps:

  • Mix the fruit, almonds, citrus zests and the carrot with the brandy and orange liqueur in a large mixing bowl. Cover and leave to soak overnight.
  • Mix all the dry ingredients together, then add to the soaked fruit mixture. Grate in the butter, then add the eggs and stir. Don't forget to make a wish!
  • Grease a 1.5-litre pudding basin with butter and line the base with greaseproof paper. Spoon in the mixture, press down well and make a hollow with the back of the spoon in the centre. Cover the surface with a round of greaseproof paper, then cover the bowl with double-thickness greaseproof paper and foil and tie at the rim with string. Lower the pudding into a pan with an upturned saucer in the base, then fill with water until it comes halfway up the sides of the bowl. Steam for 6 hrs, topping up with water as necessary.
  • Alternatively, steam in the oven. Stand the pudding basin in a roasting tin filled with water, then cover with a tent of foil and cook for the same length of time at 160C/fan 140C/gas 3. Check roasting tin occasionally as the water may need to be topped up.
  • To store, allow to cool, then store in a cool, dry cupboard. The pudding will keep for up to a year.
  • On the day, steam for 1 hr before turning out, decorating with holly and serving with extra-thick double cream or vanilla ice cream. Alternatively, try my Orange custard cream (below).

Number Of Ingredients 10

250g soft butter, plus extra for the dish
380g caster sugar
4 eggs
250g self-raising flour

CITRUS SPONGE PUDDING WITH RHUBARB SAUCE

Citrus Sponge Pudding with Rhubarb Sauce image

This lemon-lime pudding is combined with a rhubarb compote.

Provided by Martha Stewart

Categories     Food & Cooking     Dessert & Treats Recipes

Number Of Ingredients 12

2 tablespoons unsalted butter, room temperature, plus more for ramekins
3/4 cup sugar, plus more for ramekins
1 pinch of salt
1 teaspoon grated lemon zest
1 teaspoon grated lime zest
2 large egg yolks
3 tablespoons all-purpose flour
1 1/2 tablespoons fresh lemon juice
1 1/2 tablespoons fresh lime juice
3/4 cup plus 1 tablespoon milk
3 large egg whites
1 1/2 cups fresh or frozen rhubarb, cut into 1/2-inch dice

Steps:

  • Preheat oven to 325 degrees. Butter four 6-ounce glass custard cups; coat with sugar. Line a baking pan with a cloth towel, and set aside.
  • Make puddings: In the bowl of an electric mixer fitted with the paddle attachment, combine 2 tablespoons butter, 1/2 cup plus 1 tablespoon sugar, and salt; mix on medium speed until crumbly. Mix in lemon and lime zests and egg yolks. Mix in flour, then lemon and lime juices and milk.
  • In a medium bowl, beat egg whites until stiff. Gently whisk in egg-yolk mixture. Ladle into custard cups. Place cups in prepared baking pan, and fill pan halfway with hot water. Bake until puddings have set (tops may crack), about 25 minutes. Cool puddings on a wire rack, 30 minutes. Chill or let stand at room temperature.
  • Meanwhile, make rhubarb sauce: In a small skillet, combine rhubarb, remaining 3 tablespoons sugar, and 1 tablespoon water; cook over medium-high heat until tender, about 4 minutes. Let cool. Invert puddings onto plates, and serve chilled or at room temperature with rhubarb sauce.

Tips:

  • For a richer flavor, use freshly squeezed orange juice and lemon juice. Avoid using bottled juices, as they can be diluted and lack flavor.
  • To ensure the sponge pudding is properly cooked, insert a toothpick or skewer into the center. If it comes out clean, the pudding is done. If not, return it to the oven for a few more minutes.
  • If you don't have a citrus zester, you can use a fine grater to remove the zest from the oranges and lemons.
  • Serve the sponge pudding warm or at room temperature. It can be topped with whipped cream, ice cream, or fresh fruit.
  • Store any leftover sponge pudding in an airtight container in the refrigerator for up to 3 days.

Conclusion:

The burst of citrus sponge pudding is a light and refreshing dessert that is perfect for any occasion. With its bright citrus flavor and moist, fluffy texture, this pudding is sure to be a hit. Whether you serve it warm or at room temperature, topped with whipped cream or fresh fruit, this pudding is sure to please everyone at your table.
