Indulge in a delightful culinary journey with Brussels sprouts, transformed into a tantalizing dish brimming with flavors. These bite-sized wonders are roasted to perfection, caramelizing their edges while maintaining a tender-crisp texture. Sherry vinaigrette, a harmonious blend of tangy sherry vinegar, grainy mustard, and honey, elevates the sprouts with a sweet-tart balance. Crispy prosciutto bread crumbs add a savory crunch and a touch of umami, while toasted walnuts provide a nutty richness. This delightful medley of flavors and textures is sure to leave a lasting impression.

In addition to the main recipe, this article offers a collection of delectable variations to cater to diverse tastes and preferences. For a vegetarian alternative, simply omit the prosciutto and substitute vegetable broth for chicken broth in the vinaigrette. Roasted pecans can be used instead of walnuts for a subtly different nutty flavor. If you prefer a spicier kick, add a pinch of cayenne pepper to the bread crumbs. And for those who love cheese, a sprinkling of grated Parmesan or crumbled goat cheese over the roasted Brussels sprouts before serving adds an extra layer of flavor and richness.

Time 40m

Yield 4 to 6 servings

Number Of Ingredients 8

10 ounces pearl onions
1 1/4 pounds brussels sprouts, trimmed and halved
4 tablespoons unsalted butter
2 tablespoons sugar
Kosher salt and freshly ground pepper
3 tablespoons dry sherry
1 tablespoon chopped fresh thyme
Chopped fresh chives, for topping

Steps:

  • Bring a large pot of water to a boil. Add the pearl onions and cook until tender and the skins peel off easily, about 2 minutes; drain and rinse under cold water. Trim the root ends and pinch the opposite ends to remove the skins.
  • Combine the brussels sprouts, 1 cup water, 2 tablespoons butter, the sugar and 1/2 teaspoon each salt and pepper in a large skillet over medium heat. Cook, stirring occasionally, until the brussels sprouts are bright green and crisp-tender, about 10 minutes. Add the pearl onions and cook until the skillet is almost dry, about 5 minutes. Add the remaining 2 tablespoons butter, the sherry and thyme. Cook, tossing, until the vegetables are glazed, about 2 minutes; season with salt. Top with chives.

BREADED BRUSSELS SPROUTS

This is an excellent recipe for Xmas dinner and is very simple to prepare. This recipe is from my cookbook, From Uncle Bill's Kitchen.

Time 37m

Yield 8

Number Of Ingredients 8

1 ½ pounds Brussels sprouts
1 teaspoon salt
4 tablespoons butter, melted
4 tablespoons grated Parmesan cheese
4 tablespoons dried bread crumbs
¼ teaspoon garlic powder
¼ teaspoon ground black pepper
¼ teaspoon seasoning salt

Steps:

  • Wash and trim Brussels sprouts. Cut an "X" about 1/8 inch deep in the stem of the sprouts (this helps cook the sprouts more evenly and quickly).
  • In a medium-size pot, cover Brussels sprouts with water; add 1 teaspoon salt and bring to boil. Cover and simmer for 6 minutes or until tender; drain. Be careful not to overcook sprouts.
  • Place sprouts in a small casserole dish. Sprinkle 2 tablespoons of melted butter over the sprouts and mix well to coat.
  • Combine Parmesan cheese, dried bread crumbs, garlic powder, black pepper, seasoning salt, and remaining butter and mix well; sprinkle mixture over sprouts.
  • Heat sprouts under broiler (about 4 inches away from heat) for about 5 minutes or until crumb mixture is lightly browned. Serve hot.

CRISPY ROASTED BRUSSELS SPROUTS AND SHALLOTS

Crispy Roasted Brussels Sprouts and Shallots image

Slivered brussels sprouts and shallots caramelize, getting crisp and golden if you roast them at high heat. A dash of Worcestershire and a drizzle of lemon juice add just enough tang and acidity to round them out, without obscuring their natural sweetness. If you're not cooking for a crowd, feel free to halve the recipe and use one baking sheet. Serve these as a simple side dish to roast meats or fish, or use it to top a grain bowl, adding a fried or jammy egg for protein.

Time 25m

Yield 8 to 10 servings

Number Of Ingredients 9

2 pounds brussels sprouts, trimmed and sliced 1/4-inch thick
3 shallots, sliced 1/4-inch thick (about 1 cup)
1/2 cup extra-virgin olive oil
1 teaspoon kosher salt, plus more to taste
8 thyme sprigs
2 garlic cloves, finely grated or minced
1 tablespoon Worcestershire sauce, plus more to taste
1 1/2 teaspoons fresh lemon juice (from 1/2 lemon), plus more to taste
Grated Parmesan, for serving (optional)

Steps:

  • Heat oven to 450 degrees. In a medium bowl, toss together brussels sprouts, shallots, olive oil and salt. Evenly divide brussels sprouts mixture between two rimmed 13-by-18-inch baking sheets, spreading everything into one layer. Top with thyme sprigs.
  • Roast, stirring once, until brussels sprouts and shallots are tender, golden and lightly charred in spots, 20 to 25 minutes.
  • Meanwhile, in a small bowl, mix together garlic, Worcestershire and lemon juice.
  • As soon as brussels sprouts emerge from oven, immediately drizzle with Worcestershire dressing, tossing to combine. Taste and add more salt, lemon juice, or Worcestershire if needed. Top with grated Parmesan if you like and serve immediately.

Time 1h55m

Yield 4

Number Of Ingredients 10

1 tablespoon salt
1 pound Brussels sprouts, trimmed and halved lengthwise
2 tablespoons olive oil
sea salt and freshly ground black pepper to taste
4 slices bacon, chopped
1 shallot, chopped
7 cremini mushrooms, chopped, or more to taste
1 clove garlic, minced
¼ cup cream sherry
½ cup heavy cream

Steps:

  • Dissolve 1 tablespoon of salt in enough water to cover the Brussels sprouts in a bowl, and soak the sprouts in the salty water for 1 hour. Drain off the water, and toss the sprouts in olive oil, sea salt, and black pepper to coat thoroughly.
  • Preheat oven to 475 degrees F (245 degrees C).
  • Place the bacon in a large, deep skillet, and cook over medium-high heat, stirring occasionally, until just beginning to brown at the edges, 5 to 8 minutes. Reduce heat to medium; stir in the shallot and mushrooms, then cook until the shallots turn translucent, about 5 more minutes. Sprinkle in the garlic, and cook 1 minute, then stir in the sherry and cream until well combined. Bring the mixture to a boil, and stir until reduced by half. The thickened sauce should coat the back of a spoon.
  • While the sauce is cooking, lay the Brussels sprouts, cut sides down, onto a baking sheet, and bake in the preheated oven until the sprouts are browned, about 15 minutes. Transfer the browned sprouts to the sauce, toss to coat, and season to taste with salt and black pepper.

BRUSSELS SPROUTS VINAIGRETTE

Brussels Sprouts Vinaigrette image

It's always helpful to add dishes to your Thanksgiving menu that don't need to be cooked in the oven; these brussels sprouts are savory and bright, which offsets the richness of other dishes.

Provided by Martha Stewart

Categories     Food & Cooking     Quick & Easy Recipes

Time 25m

Number Of Ingredients 5

2 pounds brussels sprouts (about same size, if possible), discolored outer leaves removed and a thin slice cut off from base
1 tablespoon whole-grain mustard
2 tablespoons white-wine vinegar
2 tablespoons olive oil
Coarse salt and ground pepper

Steps:

  • Fill a large bowl with ice water; set aside. Place a steamer basket in a large saucepan with a lid; fill with 1 inch of water. Bring to a boil; add sprouts, cover, and cook until easily pierced with the tip of a paring knife, 10 to 15 minutes (depending on size).
  • In a small bowl or liquid-measuring cup, combine mustard, vinegar, and oil. Season with salt and pepper, and whisk until combined.
  • Lift basket and transfer sprouts to ice water. Let stand until cooled, about 5 minutes. Drain well and pat dry; cut lengthwise through core into quarters. Serve sprouts drizzled with vinaigrette.

Tips:

  • To save time, use pre-shredded Brussels sprouts.
  • If you don't have sherry vinegar, you can use white wine vinegar or apple cider vinegar instead.
  • To make the prosciutto bread crumbs, use a food processor to finely chop the prosciutto and bread crumbs.
  • If you don't have a food processor, you can chop the prosciutto and bread crumbs by hand.
  • Be sure to toast the bread crumbs in a skillet until they are golden brown and crispy.
  • Serve the Brussels sprouts warm, topped with the sherry vinaigrette and prosciutto bread crumbs.

Conclusion:

These Brussels sprouts with sherry vinaigrette and prosciutto bread crumbs are a delicious and easy side dish that is perfect for any occasion. The Brussels sprouts are roasted until tender and slightly caramelized, and the sherry vinaigrette adds a bright and tangy flavor. The prosciutto bread crumbs add a salty and crunchy texture that takes this dish to the next level. Whether you're serving these Brussels sprouts at a holiday dinner or a weeknight meal, they're sure to be a hit.
