BROWN RICE AND CHEESE CASSEROLE

Found this in a health food cookbook 30 years ago. Everyone loves it. Don't leave out the tamari sauce. It is a key ingredient. I like it because it's a good meatless meal. The cheese and nuts provide the protein. It's really good served with applesauce and a side veggie such as broccoli

Time 35m

Yield 6 serving(s)

Number Of Ingredients 6

2 1/2 cups brown rice, cooked
3 scallions, chopped
1 teaspoon dried dill
1 cup low fat cottage cheese or 1 cup hoop cheese
1/4 cup grated parmesan cheese
1/2 cup low-fat milk

Steps:

  • Combine all ingredients in a mixing bowl.
  • Pour into lightly oiled casserole.
  • Bake at 350 degrees F for 15 to 20 minutes.

Tips:

  • Use high-quality ingredients: Select long-grain brown rice, sharp cheddar cheese, and flavorful vegetables to create a casserole with superior taste and texture.
  • Cook the rice perfectly: Follow the package instructions to cook the rice properly. Perfectly cooked rice should be tender but not mushy.
  • Don't overcook the vegetables: Sauté the vegetables until they are tender-crisp. Overcooked vegetables will lose their flavor and nutrients.
  • Use a good quality cheese: Sharp cheddar cheese provides a bold and nutty flavor to the casserole. If you prefer a milder flavor, use a mild cheddar or Colby cheese.
  • Don't be afraid to experiment: Feel free to add your favorite spices, herbs, or vegetables to the casserole. You can also use different types of cheese, such as mozzarella or Parmesan.

Conclusion:

Brown rice and cheese casserole is a delicious and versatile dish that can be enjoyed for breakfast, lunch, or dinner. It is a good source of protein, fiber, and calcium. With its simple ingredients and easy preparation, this casserole is a perfect option for busy weeknights or potluck gatherings. Experiment with different ingredients and flavors to create a casserole that suits your taste preferences. So next time you're looking for a hearty and comforting meal, give brown rice and cheese casserole a try!
