Time 1h10m

Number Of Ingredients 12

1 tablespoon olive oil
1 chopped medium onion
4 carrots, thinly sliced
3 celery stalks, thinly sliced
1 tablespoon dried thyme leaves
Coarse salt and ground pepper
1 can (14.5 ounces) reduced-sodium chicken broth
1 bag (16 ounces) green split peas, picked over and rinsed
Ham bone plus 2 cups reserved ham from the recipe Glazed Ham with Apricot-Mustard Sauce, cut into 1/2-inch cubes
2 tablespoons butter
4 slices whole-wheat sandwich bread, crusts removed, cut into 1/4-inch cubes
1 to 2 tablespoons fresh lemon juice

Steps:

  • In a Dutch oven or 5-quart heavy pot with a lid, heat oil over medium. Add onion, carrots, celery, and thyme; season with salt and pepper. Cook until vegetables begin to soften, 5 to 8 minutes.
  • Add broth, split peas, ham bone, and 5 cups water. Bring to a boil, reduce heat to medium-low, and partially cover; simmer until peas are soft, 30 to 45 minutes.
  • Meanwhile, make croutons: In a large skillet, melt butter over medium heat. Add bread and cook, tossing occasionally, until browned and crisp, 6 to 8 minutes. Transfer to a paper-towel-lined plate.
  • Remove and discard bone from soup. Working in batches, puree only 1/2 the soup in a blender (don't overfill); return to pot. Add ham cubes, and simmer until heated through. If necessary, thin with water. Add salt, pepper, and lemon juice to taste. Serve topped with croutons.

Categories     Easter     spring     winter     comfort food     dinner     main dish     soup

Time 1h40m

Yield 6-8 servings

Number Of Ingredients 13

3 tbsp. olive oil
2 c. diced ham (about 12 oz.)
1 yellow onion, chopped
3 carrots, peeled and sliced
2 celery stalks, sliced
3 garlic cloves, chopped
1 lb. dried green split peas
8 c. chicken stock
2 tsp. dried thyme
1 bay leaf, optional
1/2 tsp. salt, plus more to taste
1/2 tsp. ground black pepper, plus more to taste
Chopped fresh parsley, optional

Steps:

  • Heat a large Dutch oven or pot over medium heat. Add the olive oil and ham. Cook, stirring occasionally, until the ham pieces are golden brown, 8 to 10 minutes. Increase the heat to medium-high; add the onion, carrot, and celery and continue to cook until the vegetables are slightly softened, about 5 more minutes. Add the garlic and cook 1 more minute.
  • Meanwhile, place the split peas in a colander. Rinse them well and pick through and discard any tiny pebbles or debris.
  • Add the chicken stock, dried thyme and bay leaf, if using. Bring to a simmer, then reduce the heat to medium-low and cook, uncovered, stirring occasionally, for 1 hour and 30 minutes until the peas "split" open in the pot and are very tender. (If the pot stops simmering during cooking, increase the heat to medium until it returns to a simmer, then reduce the heat back to medium-low). Add 1/2 to 1 cup of water to reach desired consistency.
  • Season with the salt and black pepper. Serve topped with chopped parsley, if preferred.

JUDY'S HEARTY SPLIT PEA AND HAM SOUP

Judy's Hearty Split Pea and Ham Soup image

This is my mom's recipe that she has been making since I was a kid. My husband never liked pea soup until he tried this one! My mom always makes it without the ham bone and just uses diced ham, but if you have bone in ham, you could put that in the soup while it's cooking. This hearty soup gets even tastier and thicker the next day when reheated. Goes great with crusty bread and butter!

CANADIAN YELLOW SPLIT PEA SOUP WITH HAM

Canadian Yellow Split Pea Soup with Ham image

Creamy yellow pea soup studded with bits of ham, carrots, celery, and thyme. There is nothing like this one on a cold day! I am a Canadian now living in the US. and cannot get Habitant® soup anymore, so I came up with this version. I think it is as good as the real thing, if not better, because it is homemade.

Tips:

  • Soak the split peas: Soaking the split peas overnight or for at least 4 hours before cooking helps to reduce cooking time and makes them more digestible. Soaking also helps remove some of the starch from the peas, which can make the soup less cloudy.
  • Use a ham bone or ham hock for extra flavor: A ham bone or ham hock adds a rich, smoky flavor to the soup. If you don't have a ham bone or ham hock, you can use 1/2 cup of diced ham.
  • Sauté the vegetables before adding them to the soup: Sautéing the vegetables in a little bit of oil or butter before adding them to the soup helps to bring out their flavor and add depth to the soup.
  • Season the soup to taste: Be sure to taste the soup and adjust the seasonings as needed. You may want to add more salt, pepper, or other spices to taste.
  • Serve the soup with crusty bread or crackers: Crusty bread or crackers are the perfect accompaniment to split pea and ham soup. They help to soak up the delicious broth and add a bit of texture to the soup.

Conclusion:

Split pea and ham soup is a hearty, flavorful soup that is perfect for a cold winter day. It is also a very affordable soup to make, which is a bonus. This soup is sure to be a hit with your family and friends. So next time you are looking for a delicious and easy soup to make, give split pea and ham soup a try.
