Yield 6 servings

Number Of Ingredients 10

4 to 5 pounds broccoli
4 garlic cloves, peeled and thinly sliced
Good olive oil
1 1/2 teaspoons kosher salt
1/2 teaspoon freshly ground black pepper
2 teaspoons grated lemon zest
2 tablespoons freshly squeezed lemon juice
3 tablespoons pine nuts, toasted
1/3 cup freshly grated Parmesan cheese
2 tablespoons julienned fresh basil leaves (about 12 leaves)

Steps:

  • Preheat the oven to 425 degrees F.
  • Cut the broccoli florets from the thick stalks, leaving an inch or two of stalk attached to the florets, discarding the rest of the stalks. Cut the larger pieces through the base of the head with a small knife, pulling the florets apart. You should have about 8 cups of florets. Place the broccoli florets on a sheet pan large enough to hold them in a single layer. Toss the garlic on the broccoli and drizzle with 5 tablespoons olive oil. Sprinkle with the salt and pepper. Roast for 20 to 25 minutes, until crisp-tender and the tips of some of the florets are browned.
  • Remove the broccoli from the oven and immediately toss with 1 1/2 tablespoons olive oil, the lemon zest, lemon juice, pine nuts, Parmesan, and basil. Serve hot.

BROCCOLI WITH GARLIC AND PARMESAN CHEESE

Broccoli with Garlic and Parmesan Cheese image

Yield Makes 4 servings

Number Of Ingredients 6

2 tablespoons olive oil
2 tablespoons chopped garlic
2 teaspoons grated lemon peel
2 pounds broccoli, stalks discarded, crowns cut into florets
1/2 cup water
1/2 cup grated Parmesan cheese (about 11/2 ounces)

Steps:

  • Heat oil in large skillet over high heat. Add garlic and lemon peel and stir 30 seconds. Add broccoli and toss to coat. Add 1/2 cup water. Cover skillet and cook until broccoli is crisp-tender and water has cooked away, about 5 minutes. Add cheese and toss to coat. Season with salt and pepper.

Tips:

  • Choose fresh, tender broccoli: Look for broccoli with tightly closed florets and a deep green color. Avoid broccoli with yellow or wilted florets.
  • Cut the broccoli into uniform florets: This will help them cook evenly. Cut the florets into 1-2 inch pieces.
  • Blanch the broccoli before cooking: Blanching helps to preserve the broccoli's color and nutrients. Bring a large pot of salted water to a boil, add the broccoli florets, and cook for 1-2 minutes. Drain the broccoli and immediately transfer it to a bowl of ice water to stop the cooking process.
  • Use high-quality bacon: The bacon is one of the main flavors in this dish, so it's important to use good quality bacon. Look for bacon that is thick-cut and has a good amount of marbling.
  • Cook the bacon until it's crispy: This will help to render out the fat and give the bacon a delicious flavor. Cook the bacon over medium heat until it's crispy and golden brown.
  • Use fresh garlic: Fresh garlic has a more robust flavor than garlic powder or garlic salt. Mince the garlic before adding it to the dish.
  • Don't overcrowd the pan: When cooking the broccoli, don't overcrowd the pan. This will prevent the broccoli from cooking evenly and will make it more likely to steam rather than sauté.
  • Season the broccoli to taste: Once the broccoli is cooked, season it to taste with salt and pepper. You can also add other seasonings, such as garlic powder, onion powder, or red pepper flakes.
  • Serve immediately: Broccoli is best served immediately after it's cooked. This will help to preserve its color and nutrients.

Conclusion:

Broccoli with garlic, bacon, and Parmesan is a delicious and easy-to-make side dish that is perfect for any occasion. The broccoli is tender and flavorful, the bacon is crispy and salty, and the Parmesan cheese adds a rich and nutty flavor. This dish is sure to please everyone at the table.
