I devised this recipe years ago to use up some leftover pork. Nowadays, we don't wait for leftovers! The spicy dish is easy to prepare, and in addition to broccoli, you can use almost any combination of fresh vegetables.

1 pound fresh lean pork (tenderloin or roast)
6 to 8 green onions
1 medium green or sweet red pepper
1-1/2 cups fresh broccoli
1 large onion
12 edible-pod peas
3 tablespoons peanut oil or vegetable oil
SAUCE:
2 cloves garlic, sliced
2 slices fresh ginger, chopped
1/4 teaspoon crushed red pepper flakes
2 tablespoons hot water
2 teaspoons sugar
6 tablespoons ketchup
4 tablespoons soy sauce

Steps:

  • Cut pork into narrow 1-in. strips, 1/4-in. thick; set aside. (Partially freeze pork first for easier cutting.) Cut green onions, peppers, broccoli and onion into 1-in. pieces; set aside. Combine garlic, ginger, pepper flakes, hot water, sugar, ketchup and soy sauce (or substitute 8 tablespoons prepared Hoisin Sauce for the ketchup and soy sauce); set aside. In wok or large skillet, heat peanut or vegetable oil over high heat. Stir-fry the pork in oil until browned; remove from wok and keep warm. Add more oil if necessary and stir-fry all vegetables tender/crisp. Add pork and sauce mixture; cook until thickened. Serve with boiled rice.

1 ½ pounds leftover roast pork, cubed
2 (10.75 ounce) cans condensed cream of celery soup

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Place rice and water in a saucepan over medium-high heat and bring to a boil. Once the water is boiling, reduce heat to low, cover, and simmer for 20 minutes, or until rice is tender.

2 tablespoons packed light-brown sugar
1/4 cup safflower oil
1 pound broccoli, florets cut into bite-size pieces, stems peeled and thinly sliced crosswise

  • Heat a large cast-iron skillet over high. Whisk together soy sauce, broth, lime juice, and cornstarch. Season pork with salt, pepper, and brown sugar.

1 1/2 lbs boneless pork tenderloin chops, cut into 1/4 inch strips
1 large head of broccoli, cut into florets
2 carrots, peeled and sliced on an angle
1 small onion, sliced into strips
6 garlic cloves, finely chopped
2 teaspoons ginger, finely chopped
4 tablespoons soy sauce
1 teaspoon crushed red pepper flakes (you can use less, I like it spicy)
1 1/2 cups chicken stock
1 tablespoon plain rice vinegar
1 tablespoon sugar
1 tablespoon cornstarch (I like my sauce thin, if you like it thicker use 1 1/2 to 2 tbs.)
1/4 cup white vinegar
water
2 tablespoons canola oil
1 teaspoon sesame oil

Steps:

  • Add sliced pork to large bowl, cover with water and white vinegar. Let sit for a couple of minutes. Rinse well, and pat dry. Note: This is my method of washing meat, you can skip this step if you want to.
  • In a large bowl combine Pork, 2 tbs. soy sauce, rice vinegar, 3 cloves chopped garlic, 1 teaspoons chopped ginger, sesame oil, and sugar. Toss to coat. Let marinade for at least 30 minutes, up to 24 hours (the longer it marinades the better it will taste). Bring to room temperature before cooking.
  • After the pork has marinated and is at room temperature, remove pork from marinade, pat dry with paper towel (do not discard marinade). In the same bowl with the marinade add 2 tbs. soy sauce, 1 cup chicken stock, and cornstarch. Mix well, set aside.
  • Heat a wok, or large deep saute pan over high heat until hot. Add canola oil, when oil is hot, add the pork. Stir-fry pork until no longer pink, about two minutes (I did this in 2 batches, not to overcrowd the pan).
  • Transfer pork to plate and cover with foil. Add the onion to the pan, cook, stirring constantly for 1 minute. Add remaining 3 cloves chopped garlic, crushed red pepper flakes, and remaining 1 teaspoons ginger. Cook, stirring constantly for 30 seconds.
  • Add the carrots, broccoli, and 1/2 cup chicken stock. Bring to boil, reduce heat to medium, cover and cook for 3 to 5 minutes.
  • Add the soy sauce mixture and the pork back to the pan, cook for about 1 to 2 minutes or until sauce thickens.
  • Serve over brown rice or my white rice recipe # 503045.

One 3/4-pound pork tenderloin
Kosher salt
Olive oil
Two 8-inch seeded semolina rolls, halved lengthwise
1/4 cup mayonnaise
1 1/2 tablespoons grated Parmesan
1 tablespoon Calabrian chiles in oil
1 teaspoon red wine vinegar
1 bunch broccoli rabe
3 cloves garlic, minced
6 slices sharp provolone cheese

Steps:

  • Preheat the oven to 400 degrees F and a grill pan over medium-high heat.
  • Sprinkle the pork tenderloin generously with salt. Coat the preheated grill pan with oil. Sear the tenderloin on all sides until golden brown and internal temperature reaches 145 F, about 10 minutes. Remove from heat and allow to rest for 5 to 7 minutes. Cut into 1/4-inch-thick slices.
  • Toast the rolls, cut side-down, on the grill pan allowing the bread to crisp up and soak up the flavor from the pork. Remove from heat and set aside.
  • Meanwhile, whisk together the mayonnaise, Parmesan, Calabrian chiles and vinegar in a small bowl.
  • Bring a large pot of salted water to a boil. Fill a large bowl with salted water and ice. Add the broccoli rabe to the boiling water and cook until just tender, about 1 minute. Remove from boiling water and drop immediately into the ice bath. Once cool, remove, drain and roughly chop.
  • Coat a large skillet with oil and heat. Add the garlic and cook, stirring, until just soft, about 1 minute. Add the broccoli rabe, season with salt and saute until heated through.
  • Build the sandwiches: Spread the mayonnaise-chile mixture on the toasted sides of a roll. Top the bottom of the roll with half the pork, broccoli rabe and provolone cheese. Top with top piece of the roll and transfer to a baking tray. Build the second sandwich with the remaining ingredients. Bake just until cheese melts, about 3 minutes.
  • Slice each sandwich in half and serve!

  • Partially freeze meat. Thinly slice across the grain into bite-size strips.

2 tablespoons soy sauce
1 tablespoon medium-dry Sherry
2 teaspoons cornstarch
1/2 lb pork loin thinly sliced across the grain and cut into julienne strips (I use center cut pork chops)
1 bunch broccoli
4 tablespoons sesame oil
1 large garlic clove, finely chopped (I used minced in a jar)
1 (2-inch) piece peeled fresh ginger, thinly sliced and cut into julienne strips (I use the stuff in a tube by Gourmet Garden)
1/2 teaspoon dried hot red pepper flakes
1/2 cup chicken broth
1 teaspoon sugar

Steps:

  • Stir together 1 tablespoon soy sauce, Sherry and 1 teaspoon cornstarch and stir in pork. Cut roccoli into small florets. Peel and cut tender sections of stems (top halves) into thin slices. Heat a wok or nonstick skillet over high heat until a bead of water dropped on cooking surface evaporates immediately. Add 2 tablespoons oil, swirling to coat evenly, and heat until hot but not smoking. Add pork mixture and stir-fry until cooked through, 2 minutes. Transfer to a bowl and wipe wok clean. Heat wok and add remining 2 tablespoons oil in same manner. Add garlic, ginger and red pepper flakes and stir-fry 2 minutes. Add 1/4 cup chicken broth and cook, covered, 1 minute or until broccoli is crisp-tender. Stir together remaining 1/4 cup broth, remainin teaspoon cornstarch and sugar, then add to pan with pork and stir-fry 1 minute.

1 tablespoon vegetable oil
1 large clove garlic, minced
2 thin slices ginger, minced
1 to 2 teaspoons hot chili-garlic paste
4 ounces lean ground pork, optional
2 tablespoons hoisin sauce
1 green onion, finely chopped or 1 tablespoon minced Chinese parsley

Steps:

  • Drain bean curd and press between paper towels to remove moisture. Slice into 1/4-inch cubes.
  • Remove tough stems from broccoli to remove moisture. Slice into 1/4-inch cubes.
  • Remove tough stems for soup or puree.
  • Heat oil in wok or large skillet; add garlic, ginger and chili paste and stir. When mixture begins to color, reduce heat and add bean curd. Stir for 2 or 3 minutes until bean curd begins to color. Add pork, if used, and cook until it loses pink color. Add broccoli and stir for 2 minutes. Add hoisin sauce; stir and cover. Reduce heat to simmer. Cover and cook for about 5 minutes. Serve.

1/2 lb pork, boneless
10 3/4 ounces chicken broth (1 can)
1 tablespoon soy sauce
2 tablespoons Burgundy wine
2 tablespoons brown sugar
2 tablespoons cornstarch
2 teaspoons ground ginger
1/8 teaspoon crushed red pepper flakes
1 1/2 cups instant rice
1 1/2 cups water
1 small red onion, sliced
1 small red bell pepper, sliced in strips
1 tablespoon garlic, minced
10 ounces frozen broccoli cuts
3 green onions, chopped
2 tablespoons cooking oil

Steps:

  • Partially freeze meat. Cut the meat into bite-sized pieces. Set aside.
  • For sauce, stir together chicken broth, soy sauce, red wine, brown sugar, ginger, cornstarch and crushed red pepper. Set aside.
  • Heat the water to boiling, add the rice, cover and remove from the heat.
  • Add 1 tbs oil to a hot wok or large skillet, and stir-fry the red onion, red pepper, and garlic until the onion is transparent, about 3 minutes.
  • Move the vegetables to the outside of the wok, and add 1 tbs oil and the pork to the center and stir-fry until no longer pink.
  • Add the broccoli to the wok and mix in with the meat and cooked vegetables. Cook for 2 minutes.
  • Pour the sauce into the wok and cook until the sauce thickens. Add the green onions and cook for 1 minute more.
  • Spoon the stir-fry over the rice and enjoy!

1 1/2-2 1/2 lbs pork tenderloin, butterflied
2 lbs portabella mushrooms, sliced
1 tablespoon butter or 1 tablespoon olive oil
1/2 cup white wine
1/4 cup fresh cilantro leaves, chopped
2 garlic cloves, smashed, divided
salt and pepper
1/2 lb broccoli floret, chopped
1/4 lb parmesan cheese, shaved about 1/8 inch thick
2 teaspoons butter or 2 teaspoons olive oil

Steps:

  • Lay out butterflied pork tenderloin, inside up.
  • Cover one half of tenderloin with one layer of shaved Parmesan, overlapped.
  • Spread chopped broccoli over cheese and sprinkle with one smashed clove garlic.
  • Dot with butter or sprinkle over olive oil.
  • Sprinkle with salt and pepper to taste.
  • Cover all with another layer of shaved Parmesan.
  • Fold unfilled half over filled half and tie together a couple of times around the middle and once length wise, with kitchen string.
  • In a large fry pan, at medium hot heat, sear on all sides, set aside, in roaster.
  • Sauce: Add butter or oil to fry pan, scrape up bits and saute mushroom slices until lightly browned, about 5 minutes.
  • Add wine, cilantro, remaining smashed garlic and salt and pepper to taste.
  • Reduce heat and simmer about 5 minutes until slightly thickened.
  • Pour a quarter of the sauce over the roast.
  • Preheat oven to 400°F, cook roast uncovered for about 45 minutes.
  • Pour remaining mushroom sauce over roast and return to oven for 10 to 15 minutes.
  • Remove tenderloin to platter, let stand for 10 minutes, then carve into half inch slices and spoon all mushroom sauce from roaster over roast slices.
  • Garnish with sprigs of cilantro.

Kosher salt
1 (1-inch) piece ginger, peeled, finely grated
1 garlic clove, finely grated
1 tablespoon plus 2 teaspoons balsamic vinegar
1 tablespoon plus 2 teaspoons soy sauce
1 1/2 pounds broccoli
3 small shallots, thickly sliced
2 tablespoons olive oil
2 tablespoons sesame seeds
1 tablespoon vegetable oil
1/2 small pineapple, peeled, cut into 1/2-inch pieces
1 tablespoon unsalted butter

Steps:

  • Place a roasting pan in oven; preheat to 450°F. Cut shoulder into four 1"-thick steaks; season with salt. Whisk ginger, garlic, 1 Tbsp. vinegar, and 1 Tbsp. soy sauce in a small bowl. Set both aside.
  • Remove stalk from broccoli. Peel, trim, and slice into 1/4"-thick planks. Divide broccoli into large florets. Blanch stems and florets in a large saucepan of boiling salted water until bright green, about 10 seconds. Transfer to a rimmed baking sheet; let cool. Pat dry and toss in a medium bowl with shallots, olive oil, and sesame seeds; season with salt.
  • Heat vegetable oil in a large skillet, preferably cast iron, over medium-high. Cook reserved pork, undisturbed, until deep golden brown underneath, about 5 minutes. Turn and cook until an instant-read thermometer inserted into the thickest part registers 135°F-140°F for medium, about 3 minutes. Transfer to a cutting board and let rest 10 minutes.
  • Pour off fat from skillet and cook pineapple, tossing often and adding a splash or so of water if needed to keep mixture saucy, until slightly softened and browned in spots, about 3 minutes. Add 1 Tbsp. butter along with any pork juices on cutting board; toss until sauce is glossy and emulsified. Stir in remaining 2 tsp. vinegar and soy sauce. Season with salt.

  • Preheat oven to 425°F (220°C). Carefully slice the pork tenderloins open lengthwise, butterfly-style (not all the way through to the other edge).
