1/4 cup chopped onion
1/4 cup chopped celery
1/4 cup butter, cubed
4 cups cubed cooked turkey breast
1 package (16 ounces) frozen broccoli florets, thawed
1 can (10-3/4 ounces) condensed cream of mushroom soup, undiluted
1 can (10-3/4 ounces) condensed cream of chicken soup, undiluted
1 cup cooked rice
1/2 cup shredded part-skim mozzarella cheese
1 can (2.8 ounces) French-fried onions

Steps:

  • In a large skillet, saute onion and celery in butter until tender. Stir in the turkey, broccoli, soups and rice; transfer to a greased shallow 2-1/2 qt. baking dish., Bake, uncovered, at 350° for 25-30 minutes or until bubbly. Sprinkle with cheese and French-fried onions; bake 5 minutes longer or until cheese is melted. Freeze option: Sprinkle cheese and French-fried onions over unbaked casserole. Cover and freeze. To use, partially thaw in refrigerator overnight. Remove from refrigerator 30 minutes before baking. Preheat oven to 350°. Bake casserole as directed, increasing time as necessary to heat through and for a thermometer inserted in center to read 165°.

3 cups uncooked wide egg noodles
1/2 lb ground turkey
1 medium chopped onion
1 cup chopped broccoli
1 (15 ounce) can tomato sauce
1 teaspoon italian seasoning
2/3 cup nonfat dry milk powder
1/2 cup water
4 ounces cubed cream cheese
1 tablespoon minced fresh parsley
1 garlic clove, minced
1 1/2 cups shredded part-skim mozzarella cheese

Steps:

  • Cook Noodles.
  • Steam broccoli until just tender 2-3 minutes.
  • In large skillet, cook turkey& onion over medium heat; drain.
  • Mix in tomato sauce& Italian seasoning.
  • Bring to boil.
  • Reduce heat, cover& simmer for approx 10 minutes.
  • In a separate saucepan, combine milk powder, water, cream cheese cubes, parsley& garlic.

1 (10.5 ounce) can Cream of Chicken Soup
8 ounces of sour cream
3 cups cooked turkey, diced (or rotisserie chicken)
1 box of stuffing mix, prepared - or leftovers
2 cups of frozen broccoli - or fresh
6 slices American cheese

Steps:

  • Preheat oven to 350°F
  • In a bowl, mix the chicken soup, sour cream & turkey OR 2 cups leftover gravy & turkey.
  • Place the turkey mixture in a sprayed 8x11 casserole dish.
