Time 1h15m

Yield 8 to 10 servings

Number Of Ingredients 10

4 cups finely chopped broccoli florets (about 13 ounces)
2 tablespoons olive oil
1/4 teaspoon crushed red pepper flakes
1 clove garlic, finely chopped
Kosher salt and freshly ground black pepper
6 ounces cream cheese, diced
Nonstick cooking spray, for greasing the pan
Two 8-ounce tubes refrigerated crescent roll dough
5 slices Cheddar, cut in half (about 5 ounces)
Ranch dressing, for serving

Steps:

  • Preheat the oven to 375 degrees F. Add the broccoli, oil, crushed red pepper, garlic and 2/3 cup water to a large skillet and stir until combined. Cover and bring to a boil. Let the broccoli steam until bright green and just crisp tender, about 3 minutes. Remove the lid and let the water continue to boil until it is completely evaporated, 3 to 4 minutes. Stir in 1/2 teaspoon salt and a few grinds of pepper and transfer to a medium bowl. Let cool slightly, about 15 minutes. Stir the cream cheese.
  • Coat the back of a baking sheet with cooking spray. Unroll both cans of crescent dough and separate unto 16 triangles. Put a 5-inch ramekin in the center of the prepared baking sheet. Arrange the triangles in a ring around the ramekin so the short sides of the dough are touching the ramekin, overlapping slightly, and the pointed ends are facing outward (it should look like a giant sun).
  • Spoon the broccoli mixture over the short ends of the triangles closest to the ramekin. Cover the broccoli with the cheese slices and remove the ramekin. Take hold of the pointed end of one of the triangles and fold it up and over the filling, tucking the tip under the bottom edge of dough to secure (the dough will not cover the filling completely). Repeat with the remaining triangles (there will be some gaps where you can see the broccoli mixture).
  • Bake until the dough is golden brown and the cheese is melted, about 25 minutes. Let cool for 15 minutes. Use a spatula to slide the ring off the baking sheet onto a platter. Serve with Ranch dressing for dipping.

BROCCOLINI IN BLANKETS

Time 40m

Yield 8 servings

Number Of Ingredients 11

8-ounce bunch broccolini, stems trimmed, rinsed and pat dried
2 tablespoons olive oil
Big pinch of kosher salt
Couple turns of black pepper
1 (8-count) can of crescent rolls, such as Pillsbury
4 slices Muenster cheese, halved
2 tablespoons yellow mustard
1 large egg
Poppy seeds, for garnish
Flaky salt, for garnish
Ranch dressing, for dipping

Steps:

  • Set an oven rack in the middle position. Preheat the oven to 375 degrees F. Line a baking sheet with parchment paper or a silicone mat.
  • In a medium mixing bowl, drizzle 2 tablespoons of olive oil over broccolini and sprinkle with salt and black pepper. Toss to coat. Arrange the broccolini in a single layer on the prepared sheet tray. Bake in the oven for 10 to 15 minutes until tender and lightly browned. Remove from the oven and set aside to cool completely.
  • Lay crescent rolls on the counter and divide into the precut triangles. Lay a half slice of cheese on the wide part of the dough, squirt or spread about 1/2 teaspoon of mustard, then roll each dough around a broccolini stem to just below the floret. It's ok if the cheese peeks out a little, it will just be crunchy cheese bits.
  • Place the rolls on the prepared baking sheet, evenly spaced apart. Beat the egg with a little bit of water, then brush on each roll. Sprinkle with poppy seeds and flaky salt. Bake for 20 minutes or until the crescent is golden brown and puffed and the broccolini edges are browned. Eat immediately or you can keep them in the fridge for a snack. Serve with ranch dressing, for dipping.

Tips:

  • If you don't have refrigerated pizza dough, you can use a package of frozen pizza dough. Just thaw it according to the package directions before using.
  • To make sure the crescent rolls are cooked evenly, place them on a baking sheet that has been lined with parchment paper.
  • Don't overfill the crescent rolls, or they will be difficult to seal and will burst open during baking.
  • If you like, you can sprinkle some grated Parmesan cheese on top of the crescent rolls before baking for an extra cheesy flavor.
  • Serve the crescent rolls warm with your favorite dipping sauce, such as ranch dressing, marinara sauce, or honey mustard.

Conclusion:

Broccoli crescent appetizers are a quick and easy snack or appetizer that is perfect for any occasion. They are made with just a few simple ingredients and can be customized to your liking. So next time you're looking for a delicious and easy snack, give these broccoli crescent appetizers a try.
