32 oz bag of frozen tater tots, (extra crispy, defrosted)
10 oz can broccoli cheese soup
2 cups sour cream
3 cups grated cheddar cheese, (divided)
1/2 cup onion, (finely chopped)
1/2 cup butter melted
1/2 tsp salt
1/4 tsp pepper

Steps:

  • Preheat oven to 350° and spray a 3 quart baking dish with non stick spray. Set aside.
  • In a large mixing bowl, stir soup, sour cream, 2 cups cheese, onion, butter, salt and pepper together until well combined.
  • Add tater tots and stir until well coated.
  • Spoon into 3 quart baking dish.
  • Top with remaining cup of cheddar cheese.
  • Bake for 40 minutes or until hot and bubbly.

1 med onion, diced
1 med green pepper, diced
1 lb bag frozen chopped broccoli
2 cans (10 1/2 oz. each) 98% fat free condensed cream of mushroom soup
2 lb bag frozen tater tots
1 cup fat free shredded cheddar cheese

Steps:

  • Preheat oven to 350 degrees F. Spray 9x13 baking dish with non-stick cooking spray. In a large skillet, brown ground beef seasoning with salt and pepper (according to taste). Add onions and peppers, cooking until tender.
  • Meanwhile, microwave broccoli according to package directions. Add soup and broccoli to meat mixture in skillet, stirring well to combine.
  • Spread meat mixture evenly into prepared baking dish. Place frozen tater tots in a single layer on top of meat mixture. Sprinkle with shredded cheddar cheese.

10 3/4 oz. can cream of chicken soup
12 oz. can evaporated milk
1/2 teaspoon ground black pepper
1 teaspoon garlic powder
1 1/2 teaspoons seasoned salt
3 cups shredded cheddar cheese
10 oz. can of chicken breast chunks, drained
10 or 11 oz. package frozen broccoli florets, thawed and drained
regular size bag (28 - 32 oz.) of frozen tater tots (I used crispy crowns--same thing, just smaller in size)

Steps:

  • Mix the soup, milk and seasoning in a large mixing bowl. Add 2 cups of the cheese, the chicken and broccoli and stir to incorporate. You can now add the tater tots and stir. Make sure that all the tater tots are coated with the mixture and incorporated well. Line a 3 - 4 quart crock pot with aluminum foil. Just because this has a lot of cheese and I wanted an easy clean up I also used a slow cooker liner. Pour the mixture into the lined crock pot. Place folded paper towels on top of the crock pot and secure with the lid. This will keep the extra condensation from the lid during the cooking process from watering down the dish. Cook on low for 5 - 6 hours or on high for 3 - 3 1/2 hours. Around 15 - 30 minutes before the end of cook time sprinkle the remaining cheese evenly over the top. This will melt the cheese nicely. If you turn the crock pot off and remove the crockery (if yours has a removable crock) the casserole will start to cool down and set faster.

I have not ever tweaked this recipe - not even to add minced garlic, sauteed onion, pimento, etc; it's too simple and delicious on its own to need tweaking. This can be made ahead and refrigerated before cooking. It freezes well and can be thawed prior to cooking.

2 teaspoons vegetable oil, or as needed
1 (16 ounce) container cottage cheese
3 eggs
½ (8 ounce) package shredded sharp Cheddar cheese
