Yield Makes 6 servings

Number Of Ingredients 10

1/2 cup unsalted butter
1 medium onion, chopped
2 garlic cloves, minced
One 10-ounce package frozen chopped broccoli, thawed but not drained (or see headnote)
Two 8 1/2-ounce boxes cornbread mix
1/2 cup whole milk
One 8-ounce container cottage cheese
4 large eggs
1 tablespoon salt
1 cup plus 2 tablespoons grated sharp cheddar cheese, for topping

Steps:

  • Preheat the oven to 375°F.
  • Heat the butter in a 10-inch cast-iron skillet over medium high heat. Add the onion, and sauté until softened, 4 to 5 minutes. Add the garlic and broccoli to the skillet, and sauté for 2 minutes, until the garlic is fragrant and the broccoli has warmed through. In a medium bowl, stir together the cornbread mix, milk, cottage cheese, eggs, salt, and 1 cup of the cheddar cheese until smooth, then pour the batter into the skillet over the vegetables and stir to blend. Sprinkle the top of the batter with the remaining cheese. Bake the cornbread in the skillet for about 30 minutes, until it is lightly golden and a toothpick inserted in the center comes out clean. Cool for 5 to 10 minutes, then serve.

Provided by Hapemom

Number Of Ingredients 9

1 (10 ounce) pkg frozen chopped broccoli (thawed)
1 package Jiffy cornbread mix
3 eggs, beaten
1 medium onion, chopped
1 cup cheddar cheese, shredded
1 stick butter, melted
1/2 teaspoon salt
1 or 2 garlic cloves, crushed
1/4 teaspoon ground red pepper

Steps:

  • Press thawed broccoli between paper towels to remove excess moisture. Combine cornbread mix, eggs, chopped onion, cheese, butter and seasonings. Stir well. Stir in broccoli (batter will be thick). Pour mixture into a greased 8" square pan. Bake at 375 degrees for 25-30 minutes, or until golden brown. Cool slightly, cut into squares.

Tips:

  • Use fresh or frozen corn. Fresh corn is best, but frozen corn works well too. If using frozen corn, thaw it completely before using.
  • Use sharp cheddar cheese. The sharper the cheddar cheese, the better the flavor of the cornbread will be.
  • Don't overmix the batter. Overmixing the batter will make the cornbread tough. Mix just until the ingredients are combined.
  • Bake the cornbread in a hot oven. A hot oven will help the cornbread rise and brown properly.
  • Let the cornbread cool slightly before serving. This will help the cornbread hold its shape when you cut it.

Conclusion:

Broccoli cheddar cornbread is a delicious and easy-to-make side dish that is perfect for any occasion. It is a great way to use up leftover broccoli and cheddar cheese, and it is sure to be a hit with your family and friends.
