**Broccoli Cauliflower Pepita Salad**

This colorful and crunchy salad is packed with flavor and nutrients. Roasted broccoli and cauliflower florets are tossed with a tangy dressing made with olive oil, lemon juice, Dijon mustard, and honey. Toasted pepitas add a nutty crunch, while dried cranberries and crumbled feta cheese add sweetness and a salty tang. This salad is a perfect side dish for any meal or can be served as a light lunch or dinner.

**Variations**

* For a vegan version of this salad, omit the feta cheese.
* To make this salad a main course, add grilled chicken or tofu.
* For a spicier salad, add a pinch of red pepper flakes to the dressing.
* For a sweeter salad, add a tablespoon of honey to the dressing.
* For a more colorful salad, add a variety of chopped vegetables, such as carrots, bell peppers, or cucumbers.

**Tips**

* To roast the broccoli and cauliflower, preheat the oven to 425 degrees Fahrenheit. Toss the florets with olive oil, salt, and pepper. Spread them in a single layer on a baking sheet and roast for 20-25 minutes, or until tender and slightly browned.
* To toast the pepitas, heat a skillet over medium heat. Add the pepitas and cook, stirring frequently, for 5-7 minutes, or until golden brown.
* To make the dressing, whisk together the olive oil, lemon juice, Dijon mustard, honey, salt, and pepper.
* To assemble the salad, combine the roasted broccoli, cauliflower, pepitas, cranberries, and feta cheese in a large bowl. Drizzle with the dressing and toss to coat. Serve immediately.
