BROCCOLI, CHICKPEA, AND CHERRY TOMATO SALAD
This easy recipe came from the March 2004 issue of Everyday Food. It is quick to put together and a colorful and delicious salad. I prefer to eat it right away, still slightly warm. I think it would be good sprinkled with crumbled feta cheese or with some chicken or tuna for a main course salad.

Tips:
- Choose the freshest produce: The quality of your ingredients will greatly impact the flavor of your salad, so be sure to use the freshest broccoli, tomatoes, and herbs you can find.
- Don't overcook the broccoli: Broccoli should be cooked until it is tender but still has a slight crunch to it. Overcooked broccoli will be mushy and not as flavorful.
- Use a variety of tomatoes: For the best flavor, use a mix of different types of tomatoes, such as cherry tomatoes, grape tomatoes, and heirloom tomatoes.
- Don't skimp on the dressing: The dressing is what brings all the flavors of the salad together, so be sure to use a good-quality olive oil and vinegar. You can also add some herbs, spices, or citrus zest to the dressing for extra flavor.
- Serve the salad immediately: Broccoli and tomato salad is best served fresh, so assemble it just before serving.
