1 package (13 ounces) smoked turkey sausage, sliced
4 cups small fresh broccoli florets
2 cups water
1 can (14-1/2 ounces) diced tomatoes, drained
1/4 teaspoon seasoned salt
1/4 teaspoon garlic powder
1/4 teaspoon dried oregano
2 cups uncooked instant brown rice
1/2 cup shredded sharp cheddar cheese
Optional toppings: Reduced-fat sour cream and Louisiana-style hot sauce

Steps:

  • In a large skillet, heat oil over medium-high heat. Add sausage; cook and stir until browned, 2-3 minutes. Stir in broccoli; cook and stir 2 minutes longer., Add water, tomatoes and seasonings; bring to a boil. Stir in rice. Reduce heat; simmer, covered, 5 minutes., Remove from heat; stir rice mixture and sprinkle with cheese. Let stand, covered, until liquid is almost absorbed and cheese is melted, about 5 minutes. 3 tablespoons olive oil, plus more
olive oil
1 large onion, chopped
2 large celery ribs, sliced diagonally
4 -6 cups leftover cooked brown rice or 4 -6 cups cooked white rice
1 lb polska kielbasa, sliced into 1/4-inch thick pieces
4 cups broccoli florets
Braggs liquid aminos or soy sauce

Steps:

  • Heat 3 Tbs olive oil in large deep frying pan, over med-high heat.
  • Add onion and stir and cook for about 1 minute;.
  • Add celery and stir and cook another minute; add sausage, stir and cook until sausage begins to brown;.
  • Add rice and stir. Drizzle more olive oil (about 3 Tbs) over top and stir into rice mixture. Let fry turning every minute or so browning the rice;.
  • Add the broccoli and a little liquid aminos to taste. Don't overdo and make too salty. Lower heat and cover and let broccoli cook till tender crisp. Broccoli will be bright green when ready. Do not overcook. Usually takes about 5 minutes.
  • Serve with the soy and some pepper to add to taste.

1 bunch broccolini, roughly chopped (about 8 ounces)
12 ounces sweet Italian sausage, casings removed
1/2 medium onion, finely chopped

1 cup arborio rice
1 clove garlic, minced
1/3 cup dry white wine
2 cups low-sodium chicken broth
1 14-ounce can diced tomatoes
1 cup grated fontina cheese

Steps:

  • Preheat the oven to 450 degrees F. Heat 1 tablespoon butter in a Dutch oven or ovenproof pot over high heat. Add the broccolini and stir-fry until just tender, 3 to 4 minutes. Transfer to a plate using a slotted spoon. Add the sausage, onion and carrot to the pot and cook, breaking up the meat, until browned, about 5 more minutes. Add the rice and garlic and cook, stirring, 1 more minute. Add the wine to the pot and cook until evaporated, about 2 minutes. Add the chicken broth, tomatoes and 1 cup water; cover and bring to a boil. Transfer the pot to the oven and bake until the rice is tender, about 15 minutes. Remove the pot from the oven. (Don't worry if the risotto seems wet; it will thicken when you add the cheese.) Vigorously stir in the remaining 2 tablespoons butter and the cheese until creamy, 1 to 2 minutes. Stir in the broccolini and divide among bowls.
